it could be an alternate for jesus, which may stir up some religious types. if you don't feel like doing that, then it's an interjection used to indicate annoyance.

Jeez is short for Jesus, or even Jesus Christ.
The reason it is the shortened version for this, is that a long time ago, when people wanted to "exclaim" something or they were surprised or irritated, for some reason they said "Jesus Christ". Maybe because they were so "exclaimed", surprised, or irritated that the cause could only be blamed by the "awesome power" of Jesus.
Haha ie: "Jesus you're stupid!" (Wow, I can't believe God would have made such a dumb creature.) "Jesus Christ, you said that to her?" (I can't believe God would let such a bad thing be said to someone.) "Jesus, this sucks." (Why would God want to do this to me?) Replace all "Jesus" with "jeez".
PS. I'm not religious, but that's where I assume and most would agree that is where it comes from.

jeez = jesus
jesus is the prophet of the christians
some people will say oh GOD = Allah
some would say Oh jesus or jeez , and also JEE

jeez > When somebody keeps bothering u then ur tired of answering all that he/she says say JEEZ...jeez ;) and a short word for Jesus I think

ok well obviously by the way it seems to look like its short for jesus but i never even though of it that way hmm..i just used geez instead saying OK or oh my gosh never even thought about it haha good question tho!

It's not short for Jesus, it's short for Gee Whiz.
I prefer Geez Louise. I use it when I'm annoyed.

It is a more polite thing to say than "Jesus" if you are worried about offending people that might overhear you.
