I make all my pies now with frozen berries...blueberries, strawberries and rhubarb. I'll put the berries first in a tiny bit of water in a saucepan on the stove. I'll stir occassionally and wait until the mixture bubbles. Be careful that the mixture doesn't burn...or it will stick later. Add the amount of sugar or sweetener that you want...do the taste test. Now mix about 1/4 cup of cornstarch with 1/2 cup of water in a cup. Add the cornstarch/water mixture to the berries on the stove. Stir until the mixture bubbles again. Add enough of the cornstarch/water mix until you are happy that the berries for your pie are in a thick enough mix. They should be thicker than a pudding when it's ready to eat. Put the thick berry mix into your unbaked pie shell and bake at 375 F or until the pie shell is golden brown. If you pre-cook the berry mix with the cornstarch mixture, you will have more of a guarantee that your berry pie filling will be thicker and less sticky. Good luck!

There is too much liquid in frozen berries. What you can do is toss the berries in a Tablespoon of Cornstarch before baking in oven. This will help create that thick gooey texture you find in a store bought pie. Mix the starch with the sugar first, this will keep it from making lumps.
