This former employee lives in New Jersey, will it even be worth it to call the police and spend time and money for something I probably won't get back? The amount is approximately $2700 - what should I do or what can I do legally?

call an atty and the police...$2700 would be enough to make it a felony in Wisconsin

You can file a judgement against him for that amount, at the local courthouse. It will remain as a mark on his credit, til he takes care of it. Have your proof when you go to file. Also ask your lawyer about the technicals of the proceedure.
OR you can pay someone $500 to break his legs...... but HEY, we're civilized people nowadays!

I think you'll find that federal wage and hour laws have been violated. Threaten to get the Feds involved and watch how fast this company gives you your money!

Contact your attorney, likely call police. Even if you don't get the money back, even small-time crooks shouldn't get away scott free!
