Why can't you marinate in the fridge. I do. Anything left out of the fridge for any time will start to grow "things" you don't want in your tummy.

Years ago our mums used to put chickens or turkeys to defrost in a sink , however we've since learned more about sammonella and that chicken and turkeys, most meat should be in the refrigerate to marinate. So your answer is no , you shouldn't marinate food out of the frig.

I suppose it COULD, but I would seriously recommend against it. Food starts to spoil at room temperature, no matter what it is - but especially dairy & meat products! Save yourself a case of food poisoning and just marinate in the fridge.

I marinate in the fridge - overnight sometimes.
