Beef With Red Wine Sauce
--Southern Living, FEBRUARY 2006

Prep: 15 min., Cook: 6 hrs.

3 pounds boneless beef chuck roast, cut into 1-inch pieces
1 medium onion, sliced
1 pound fresh mushrooms, sliced
1 (1.61-ounce) package brown gravy mix
1 (10 1/2-ounce) can beef broth
1 cup red wine
2 Tbsp. tomato paste
1 bay leaf
Hot cooked egg noodles or rice
Garnish: chopped fresh parsley

Place first 3 ingredients in a 6-quart slow cooker.
Whisk together gravy mix and next 3 ingredients; pour evenly over beef and vegetables. Add bay leaf.
Cover and cook on HIGH 6 hours, or LOW for 9 hours. Remove and discard bay leaf. Serve over noodles. Garnish, if desired.

Yield: Makes 6 servings

Green Bean Bundles

1 pound sliced bacon, cut in half horizonatally
1 package whole frozen green beans -- thawed and rinsed or usefresh green beans,trimmed and blanched
1/4 cup butter
3/4 cup packed light brown sugar
2 teaspoons garlic powder

Group 6 to 8 beans together into a bundle and wrap a slice or 1/2 slice of bacon around the bundle of beans and secure with a toothpick.

Place bundles in a 9x13 inch baking dish in one layer.

In a saucepan, melt butter. Add brown sugar and garlic powder. Bring to a boil.

Remove from heat and pour over the beans.

Cover dish with foil and bake at 350ºF for 30 minutes.

BUTERSCOTCH BROWNIES
Brownies:
1 cup butter, melted and slightly cooled
2 cups packed light brown sugar
3 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 cup chopped walnuts
Icing (optional):
1/2 cup butter, softened
3 cups sifted confectioners' sugar
2 teaspoons instant coffee granules
2 tablespoons water

Preheat oven to 350ºF.
In mixer, combine2 cups light brown sugar and butter, beating well to mix. Add eggs and vanilla.
Sift together all-purpose flour, salt and baking powder. Stir it into the wet ingredients, and then add the nuts. Mix well.
Spread batter in a greased 11x7x2” pan and bake for 30-35 minutes or until a light gold. Cool in the pan for 10 minutes, then turn out of pan and let brownies finish cooling on a rack.
To Make Frosting: Dissolve coffee in the water. Cream 1/2 cup butter with confectioner's sugar. Beat it until light. Beat into the sugar mixture. Spread over the brownies. When frosting has set, cut brownies into squares.

How about Thai red Curry with Duck and Lychees? I just gave this recipe to someone else who was asking about it:

500ml coconut milk
50g Carrots, sliced lengthways
90g canned sliced bamboo shoots
50g sliced baby corn
400g whatever meat you like - Duck breast is excellent, as is chicken
A handful of Lychees, peeled & de-stoned
1 red pepper, sliced
50g bean sprouts
1 tbsp Thai Fish Sauce (Nam Pla)
1 tbsp Sugar
2 medium red chillies, chopped (use the seeds)
4 tsp fresh coriander, chopped
10 fresh Thai basil leaves
10 fresh Thai Kaffir Lime leaves
1 Red Onion, slices
2 Garlic Cloves, sliced
1 inch Galangal root, cut into matchsticks (or Ginger if you cant' find it)

What do you have on hand?

If you have eggs, cheese, and a few vegetables, try an omelette. If you add toast and greens, you can have eggs benedict.

Pasta is versatile. Have that with sauce, or stir-fried vegetables, or herbs and butter.

Soups are usually good. I've seen a number of good recipes, if you don't want Campbell's. Or chili: A few times I've added tomatos and freshly-browned beef to mine to dress it up, with great results.

Take your pick and enjoy!

Stir fried Pesto Penne Pasta... mmmm

You will need:

Olive oil
x3 cloves of garlic
full onion chopped
chopped/ sliced mushrooms
x1 chopped tomatoe
x3 tablespoons of green pesto
Flavours:salt, soy sauce and worcester sauce, tobassco, black pepper add according to taste
and boiled penne pasta
in a Wok:

add olive oil, and add the garlic and onions, fry for 4 mins

add the tomatoes, tir for 2 mins then add the mushrooms together with the Flavours:salt, soy sauce and worcester sauce, tobassco, black pepper add according to taste, stir fry,
make sure you got plenty of olive oil (the healthy one), keep stir frying then last add pasta, sizzle for 5 mins and enjoy with garlic bread and roast potatoes

Chicken cordon bleu - use organic chicken. The texture and taste is incredible. Use Nueske ham if you can find it.
