Just use these basic ingredients below:
2 dozen chicken wings, 2 cups of light soya sauce, 4 tablespoon sugar, 2 tablespoon 5 spices powder, 1 tablespoon white pepper powder. Mix everything up and marinate for at least 2 hours before using 500g plain flour to coat wings before being deep fried in a pot of hot oil.

I think they dip them in a tempura batter and fry them until done. Of course,it depends upon if the chinese chicken wings you're talking about are the same kind I"m talkinga about.
The ones I mean taste like they've been saokedin soy sauce first.
