COD FILLETS FLORENTINE
Serves: 8
3 pounds cod fillets
1 teaspoon salt
1/4 teaspoon white pepper
1/2 cup white wine
1 1/2 pounds cleaned spinach
2 cups Mornay sauce
1/2 cup grated Swiss cheese
Bone and skin the fillets. Cut into equal portions.
Arrange in a buttered baking pan. Season with salt and pepper. Pour the wine over. Cover with foil, and bake at 350 F (180 C) until flaky.
Blanch the spinach in salted boiling water. Drain and squeeze out excess of water. Mix a small amount of sauce into spinach. Spread the bottom of an oven proof serving dish with chopped spinach.
Arrange the fish on top, and pour the remaining sauce over. Sprinkle with cheese, and brown under a broiler.

1 lb Cod fillets, thawed and drained
10 oz Spinach, frozen, thawed and drained
4 oz Mushrooms, fresh, chopped
1/2 cup Cheddar cheese, mild, shredded
1/3 cup Butter, unsalted
1 tsp Dill weed
1 tsp Nutmeg
1/2 tsp Hot sauce
Method :
Place cod in ungreased baking dish.
Layer with spinach, mushrooms and cheese.
Melt butter and add seasonings. Pour this on top of cheese.
Bake at 350 for around 30 minutes.
For a nice variation, sprinkle crumbled bacon on top before baking.

Easy way - make cheese sauce in normal way (flour and butter into roux, gradually add milk, cook for 3 minutes, add grated cheese & tsp mustard) .Wilt spinach and put into ovenproof buttered dish. Make well in centre of spinach and break an egg into it. Add salt and pepper. Put uncooked cod fillet on top. Pour cheese sauce over top and sprinkle with grated cheese and some grated nutmeg if you like it. Put into hot (200 degrees C) oven for around fifteen minutes until top is bubbling. Serve with boiled potatoes or pasta
