Where can i find the recipe for the breading they used, and where can I find the recipe for the sauce that came with it? The sauce had cajun spices in it. I love catfish and chilis did it perfectly, but they took it off the menu, and now no one seems to know anything about it.

I remember it...The Caliente catfish...

Ingredients:
1/2 cup heavy cream
2 tsp chili sauce
1/2 tsp Dijon Mustard
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
This actually taste like the sauce....

Im including a beer batter recipe too

BEER BATTER FISH

2 eggs, separated
2/3 c. beer
2 or 3 drops Tabasco
1 c. flour
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. garlic
2 tbsp. butter, melted
1 lb. fish fillets

Dry fish on paper towel. Beat egg yolks until light and lemon colored. Gradually stir in beer and Tabasco. Add flour, salt, paprika, butter, and garlic. Stir until blended and smooth. Beat egg whites in separate bowl until whites are stiff but not dry. Fold into batter. Dip fish pieces into batter. Deep fry in heated oil (375 degrees) for 3 to 4 minutes or until golden brown. Drain on paper towel. Yields: Approximately 10 (6 inch) pieces of fish, coated.

Excellent year I was seven and remember playing in the garden with the clothes maid and a sheet making a play house and having picnics. Plagues of ladybirds, frogs and grasshoppers(caught lots in jam jars)
