My daughter(who is almost 6) helped me some up with some new ideas since my 2 1/2y/o son is a picky eater.
Mini Pizzas:
english muffins, pizza sauce(or ketchup..can even skip this for easier cleanup), and cheese..can add pepperoni/ chicken..whatever you want.
Dessert pizza:
english muffin, can use yogurt/marshmallow fluff/flavored cream cheese as the "sauce", then top with fruits
tortilla wraps:
these can be used for snacks, full meals etc
would usually fill them with same stuff as a sandwich, roll up then cut into 1" circles.
there are tons of ideas online. just do a search for fun snack ideas for kids, or anything like that.

Why does a two year old need a "new and interesting snack"? What is wrong with fruit or crackers or some other simple and nutritous snack? Babies do not need or desire new food experiences and noone needs the extra calories that most "interesting snacks" will bring.
Added: Yeah M&M's and marshmallows are a great snack for 2 year olds.....NOT!

String cheese, flavored yogurt, any frsh fruit (cut up into small peices), dry cereal, goldfish crackers, cheese quesedilla ( just use chredded cheddar in a flour tortill- you can microwave or put in a nonstick skillet), frozen pudding pops ( just place pudding in paper bathroom cups, place a stick in them and freeze, once frozen run under warm water and pull out), or maybe try cheese, crackers and lunch meat ( cut the cheese and meat to fit the crackers) Good luck!!

My 2 year old daughter loves to eat Kix cereal without milk and raisins together. Another snack she loves, but is messy is graham crackers with peanut butter.

We make up a toddler trail mix.......raisins, cheerios, sunflower seeds, mini marshmallows, m&m plains.....any mixture of small things and they vary based on how many teeth your child has and how good they eat. You can sneak healthy items into these mixtures and they think they are fun. Put them in a tupperware snack container and let them know it is their very own--that will make it even more special and they eat it quicker.

Fruits and vegetables are the best. Try making a fruit salad for a change, also try to cut the vegetables into shapes or make a shape out of them, or let him/her help you to do that it's more fun.
