Just called my mother. She's going to cook the chicken on the grill now with paprika and serve the rice on the side with a pasta salad(with the diced tomatos, dill, and spearmint leaves). So I guess I'll just be getting the chickon breast on the side. But I will remember all of your answers for the next time. Thanks!

I would cook the rice and then add 2 cans of cream soup and a little milk. Saute mushrooms and sliced onions in butter then add that to the rice - cut the chicken in pieces and mix it in the rice - put in a baking dish cover with cheese and heat.
Sometimes I put broccoli pieces in the chicken and rice as well.
It is good.

Okay...so take the tomatoes and sprinkle some salt, pepper and cumin for a bit of Mediterranean-style...if you have Kalamata olives available, add a hand full (chopped)...and some lightly toasted pine nuts as well.
Or, you could add some olive oil, minced rosemary and thyme and a bit of garlic.
Or, you could chop some zucinni & yellow squash, briefly pan-fry them in olive oil and toss in with the rice.

I am from Trinidad and that's we cook home. You don't have to put all together but it makes a good tasty colourful rice.

Broccoli and Cheese always go well with Chicken and Rice, just mix it all together and you'll have a kind of casserole. Really tasty

Do a fried rice. Add veggies, celery, oinion, green peppers, water chestnuts, baby corn, soy sauce. Or teryaki sauce is good on it too.
