Easy ChickenCurry

1/4 lb(100 g) cooked chicken, chopped

1 small onion chopped

2 cups
(500 g) cauliflower, broken into florets

6 mushrooms sliced

3 Tbsp
(50 ml) soya sauce

5 Tbsp
(75 ml) cooking oil

1 cup
(250 ml) chicken stock

curry powder

Heat the oil in a small frying pan.

Place the chopped onion in the frying pan and cook until the onion becomes soft and brown.

Place the chicken, mushrooms, cauliflower and soya sauce into the frying pan and cook for 10 minutes, stirring occasionally.

Add curry powder, whilst stirring, until the oil is soaked up by the powder.

Place the cup of chicken stock into the pan and simmer till the liquid is reduced, stirring continuously.

Best served with brown rice or fried sliced potatoes.

To serve 2:

Chicken breasts, cubed - however much you want to eat
1/2 tsp ground Turmeric
1/2 tsp ground Fenugreek
2 tbsp Red Chilli paste or 2 whole fresh Red Chillis, sliced with seeds
300ml water
2 tbsp vegetable oil
1/2 tsp Mustard Seeds
10-12 Curry Leaves
1 Red Onion, sliced
1 tbsp peeled and finely sliced Fresh Ginger root
1 tbsp peeled and finely sliced Garlic

Fry up the the mustard seeds until they pop. Add the Garlic, Ginger and Onion in the vegetable oil, and some butter or ghee if you have it. Do this gently so all the flavour doesn't evaporate.

Then add the Chicken and gently fry until lightly browned.

Then add the Turmeric and Fenugreek, and stir until chicken is fully coated.

Add the water and all remaining ingredients, and allow to come to the boil for just a second, before turning down to a gentle simmer.

Simmer gently for about 30 min or so, or until it thickens to make a nice sauce consistency. If it thickens sooner, cover the pan and leave to simmer covered. If it isn't thick enough for you after 30min, add a little cornflour, carefully, while constantly stirring so you don't get lumps.

Or if you want to be fancy, roughly chop some Okra, and put it into the sauce until it heats through - the sap/juice of Okra is a bit glue like, and will thicken the sauce, and also it makes an excellent thing to have in it anyway.

My family and I love Chicken Divan.
Easy, Quick, and Mess free.

1. Cook 5 chicken breasts - cube chicken when cooked and drain real well, place chicken in a 9x13 baking pan

2. 1 bag of broccoli florets- partially thawed and drained - put this on top of chicken

3. mix in seperate bowl - 2 cans of cream of chicken soup and 1/2 cup of best foods mayonaise, and 2 tablespoons of curry

4. bake this @ 375 for 45 minutes

5. remove from oven - 2 cups of grated cheddar cheese on top and garlic croutons

6. cook an additional 10 minutes or until cheese is melted

7. remove from oven and let stand for 5 - 10 minutes and then serve

I hope this works, I usually serve this with warm sourdough bread and salad. Great recipe passed down in my family.

Chicken Curry

1/4 cup olive oil 1 cup onion, finely chopped 1 cup celery, finely chopped 1 green apple, cored and finely chopped (I use Granny Smith apples) 1/2 cup wheat flour 3 cups chicken broth 2 teaspoons curry powder 1/2 teaspoon paprika 1/2 teaspoon soy sauce 1/4 teaspoon garlic powder 2 cups cooked chicken, diced Salt to taste 2 cups cooked brown rice

1. Sauté the onion, celery and apple in the olive oil until tender, about 10 minutes. (When freezing this I will cook it less, maybe 5 to 7 minutes.)

2. Mix flour into the sautéed ingredients and stir constantly for about 1 minute.

3. Remove from heat and blend in the chicken broth.

4. Add curry powder, paprika, soy sauce and garlic powder and mix well. Add salt to taste.

5. Gently stir in chicken.

To freeze: Pour into zippered freezer bags or other containers.

On serving day: Pour thawed mixture into pan and heat completely.

Serve over brown rice. For variety, cook 1 cup brown rice with 1 cup chicken broth and 1.5 cups water. About 15 minutes before it's finished, add in some dried fruit. I like a combination of dried cherries and golden raisins with this recipe.

6 chicken breast, cooked and cut into 1 inch cubes
2 lbs of fresh asparagus {or fresh broccoli} cut into bite size pieces
½ cup water
dash of salt
1~3oz. can sliced water chestnuts
Mix Together;
2 cans cream of mushroom soup
½ cup milk
½ cup miracle whip ~ or mayonnaise
1½ cup shredded cheddar cheese
2 Tbs. Lemon juice
1½ tsp. curry powder
3 cups seasoned croutons
In a microwavable bowl, cook asparagus {or broccoli } with a dash of salt for 3 minutes. In a 9 x 13 baking dish, sprayed with cooking spray. Layer asparagus, chicken, and water chestnuts. Pour soup mixture over the top. Sprinkle with seasoned croutons. Bake at 350º for 50 minutes, or until hot and bubbly.
This is a great casserole to make the day ahead of time and refrigerate over night. Just add 2o minutes to the cooking time {or until hot & bubbly} and wait to add the croutons the last 30 minutes of cooking.

get about two to three table spoons of oil add some curry powder coriander, a little chili powder and other spices just experiment you will need to mix the spices with the oil fry your onion and peppers and whatever else and when all cooked throw in the spices which should be like a paste. hey presto you have a home made curry

Buy a cooked chicken strip the meat and put it in a bowl, add a jar of your favourite curry sauce stir and heat gently until the chicken is hot. This only takes a short time and is delicious.

easy recipe for curry (you can use chicken, beef, or even fish):

1 cup cooking oil
4 pieces potatoes, quartered
1 head of garlic, crushed, minced
1 piece of onion, chopped fine
1 square inch ginger, chopped
1 kilo meat of your choice, cut into bite sized pieces
1 cup cconut cream
2 cups coconut milk
4 stalks lemon grass
1 tsp chili powder
2 Tbsp curry powder
salt and pepper to taste
1 Tbsp sugar (optional)

Direction:
1. Heat oil in deep heavy bottomed pan. Fry the potatoes until golden brown in some parts. Set aside potatoes and drain.
2. Fry the meat pieces and brown on all sides to seal in the flavor. DONT cook the meat thoroughly at this point, just BROWN the pieces on all sides. Set aside and drain.
3. Saute garlic in the remaining oil until golden brown, careful not to burn it. If you err, err on the side of undercooking garlic than overcooking.
4. Add onion. Cook for 30 seconds.
5. Add ginger and cook for 30 seconds.
6. Put back the meat pieces. Add the rest of the ingredients and let boil for 10 minutes. Lower heat and cook until the meat pieces are ALMOST tender.
7. Add the potatoes.
8. Cook until the meat pieces are tender and the coconut milk/cream has turned to coconut oil.
9. Adjust salt and pepper as desired.
10. Serve hot with steamed rice.

It looks complicated but it's not. its just a matter of browning the potatoes and meat before boiling. Sauteing garlic, onion and ginger is basic procedure. When done, you just put everything in and boil till tender and coconut il has surfaced and voila! superb curry.

If using fish, just fry cut up fish fillet till golden brown but moist inside. set aside and drain. continue as directed, except add the fish when the sauce is already cooked and oily-- heat thru and serve.

Buy a jar of madras, fry some onions and peppers, add diced beef, add jar, a spoonful of apricot jam, 2 beef oxo cubes and a couple of bay leaves and a tin of chopped tomatoes and simmer gently for an hour to an hour and a half, I did it last night, yummy and very easy.
