The Roman gods evolved with Roman society, as new members of the pantheon were added from new areas of the Empire - and similarity between certain gods would cause their names to amalgimate in that area.
However, there was never an overall term for believing in the Romans gods (unlike being a Hindu). What would happen is, yes, a Roman would associate with one god (towards the end of the Empire, many soldiers were in the cult of Mithradetes) - but they would still believe in the existance of the other gods. People from Rome, Greece, Babylon or Egypt had many gods, but did not see themselves as belonging to any particular "religion" unless they associated themselves with, say, the cult of Isis from Egypt.
The "ancient" religions had no problem with people worshipping whatever they liked - they had no problems with Judaism, or Christianity, for example. The only reason Christians were persecuted is because they, very publically, denounced the other gods. As the average Roman believed in the existance of all these gods (and chose whether or not to worship them directly), they were frightened that by allowing this person to live, they would invite the wrath of the gods. This is why Christians were executed - not for being Christians, but for preaching that all the old gods were wrong (the Romans were never saying that Christianity was wrong).
In a way, the Romans were right with this belief - it was the abondonment of the old gods, and the adoption of Christianity, that led to the fall of the empire, as the age of religious and ethical tolerance was replaced by totalitarianism and an intolerant society.
The modern world has much to learn from the ancient empires about religious and social acceptance - Romans never tried to force their ways or beliefs on anyone by means of the sword, but by "Romanisation" - finding similar beliefs and practices between the cultures, and encouraging these.

You would just say "I am polytheisitc" or I worship "Jupiter". The official state religion focused on the worship of a pathenon of Greco-Roman gods/esses including Juno, Minerva, Mars and Jupiter Optimus Maximus (who became the patron diety of Rome). You would think that they would have an official term because there were MANY other religions, especially in the mystery religion sect (i.e. the Egyptian Cult of Isis) that DID have names, but there isn't one historically documented that the polytheisitc Romans collectively called themselves. And it was Theodocious who made Christianity the official religion of Rome. Constantine (along with Diocletian) issued the Edict of Milan in 313 officially tolerating Christianity.

The only one i know is the roman cathloic church started approxmently 300 A D ,but the true church Christ died for bagan on the day of pentecost as recorder in act chap 2//But they were persucuted greatly that the roman leaders felt that they could not contain their zeal for the Lord and allowed the cathloic church as the offical religion// And they percusted anyone who did not believe like them during the cathloic inquiestion 15th century and into world war 2 they were found to be somewhat sympathy for nazi germany//Scary isn't it ??

It did have a name, actually. The most common was Cultus Deorum (literally "cultivation of the gods", but a modern translation would be "worship of the gods"), and an alternative was the religio Romana. There was also the ritus Romanus (Roman rite), which defined the style of ritual (as opposed to for example ritus Graecus, or Greek rite).

Mythology is what it's called by most. There is still pagan holiday celebrations such as Easter. Most people think it is the day Christ was crucified, but they are wrong. Christ was crucified the day after because the king didn't want a war started. Easter is the roman goddess of spring.

Yes, they picked their favorites and respected the ones reputed to be most "powerful." It's now called Paganism, Roman mythology, etc. Of course, from objective standards, the name of the current religion in Rome is Monotheistic mythology.
