This will depend on the type of diet you follow. A low fat, or low carb diet will be different. You need to decide what is right for you . On Atkins, it did not matter how may grams of fat I ate. On Weight Watchers, the less the better.

Quit focusing on weight, focus on your percentage of body fat. Pay more attention to how your clothes fit, not what the scale says. I have helped ladies go from a 14 to a 4 and only lose 8 lbs, I have also helped ladies go from an 8 to a 2 and gain 6 lbs. Everyone says muscle weighs more than fat. That is misleading like which weighs more 100lbs of lead or a 100lbs of feathers. They both weigh the same. 5lbs of muscle weighs what 5 lbs of fat weighs but the muscle takes up less space. Metabolism is the number of calories you burn in a day without adding movement. Muscle is the engine of your metabolism, fat is the fuel. If you want to build more lean muscle you have to resistance train. Muscles are made of protein. If you resistance train and do not consume quality protein then your body can not build lean muscle. 3lbs of lean muscle will increase your metabolism to burn an additional 3500 calories per month=1lb of fat. Through out the day you will gain and lose approx.+/- 5lbs. If you weigh right before you eat and right after, you will gain the weight of the food you just ate. If you weigh right before and after you go to the restroom, you will lose the amount of waste you eliminated. You say you "gain weight quick, even if it's water". This is not weight gain or weight loss. The body is made up of organs, muscle, skin, fat, bones, etc. It's important to focus on how to lose only the fat. If you eat too little, your body will use it's own muscle (converted to glycogen) as fuel. This reduces your metabolism. Look to change your ratios of Proteins, Carbs and Fats in your diet. Your body needs all 3. 40% of your calories should come from Protein, 40% from carbs, and 20% from fat. Each gram of protein=4 cal, Carbs=7cal/gm, Fat=9cal/gm. As a female you need approximately .6-.8 grams of protein per kg of body weight to feed your lean muscle.
