Beef...but there are various states of "beef". There's "PURE BEEF", which is only muscle meat and the fat that pertains to cuts of meat. There's "ALL BEEF", which includes organ meats such as hearts and tongue. And then there's your cheap "beef patties" and beef weiners, which can contain just about any boneless part of a cow, including snouts and other things you don't want to know about, as well as fillers such as soy, wheat, and even ocasionally potato starch. I believe McDonalds refers to their beef as "All Beef". Check out the ingredients on frozen beef patties at your local grocery store. By the way, it's ILLEGAL for a butcher to add anything other than muscle meat and the pertaining fat to ground meat. Bad things used to happen back in the day, but no self-respecting butcher will taint his own product. The USDA will shut down a store and fine or jail the perpetrator if they find a butcher adding anything else to the grind.

Jokes aside, it really is 100% beef. Otherwise, it's false advertising and false labeling, which would result in massive fines and lawsuits.
From the McDonald's website: "Beef Patty: 100% pure USDA inspected beef; no additives, no fillers, no extenders."

It is actually beef but the beef is from old dairy cows who are sick, injured, and/or can no longer produce usable milk.

In the grand scheme of the Universe, some questions are best not answered. This seems to be one of them.
Do you enjoy their products? Do you enjoy "fast Food"?
I teasingly say it's Mystery Meat. I have eaten them, don't strictly ENJOY them, but for me food is function rather than form.
I say go with what you know, question what you don't, but expect no mysteries to be solved,,,here at least.
