Does anyone know a recipe or a kind of cake that doesn't need eggs? i'm supposed to be making cakes/biscuits of some kind but i don't have any eggs and i dont have a shop nearby that sells them....please help!

The Italian name for this recipe is Torta di cioccolata alla Margherita.
Ingredients
450g/1lb plain flour (organic if possible)
6 tbsp unsweetened cocoa powder
2 tsp baking powder
2 tsp bicarbonate of soda
300g/10oz caster sugar
125ml/4fl oz vegetable oil
300ml/½ pint water
2 tbsp distilled white vinegar
2 tsp vanilla extract
whipped cream, to decorate
For the icing:
dark chocolate spread
OR
225g/8oz icing sugar
25g/1oz unsweetened cocoa powder
75g/3oz butter, diced
1 tbsp golden syrup
4 tbsp milk



Method
1. Preheat the oven to 180C/350F/Gas 4. Sift the flour, cocoa powder, baking powder and bicarbonate of soda into a large bowl and stir in the sugar.
2. Combine all the wet ingredients in another bowl. Pour the wet ingredients into the dry ingredients all at once and beat until smooth.
3. Pour the batter into a greased 23cm/9in springform cake tin and bake for about 1 hour, until a skewer inserted in the centre comes out clean (place a sheet of foil over the top of the cake if it becomes too dark). Remove from the oven and leave to cool in the tin.
4. Turn the cake out of the tin and spread the chocolate spread over the top. Or, if you are making your own icing, sift the icing sugar and cocoa powder into a bowl and make a well in the centre.
5. Gently heat the butter, golden syrup and milk until the butter has melted, then pour into the well in the dry ingredients and stir until smooth.
6. Beat with a wooden spoon until the icing has cooled and thickened slightly. Spread the icing over the top and sides of the cake with a palette knife. Decorate with whipped cream

I know of two cake recipes that don't use eggs, one uses cold strong tea the other uses vinegar. I have used both recipes many times and both turn out really well and keep for ages.Boiled fruit cake1 1/4 hours to 1 1/2 hours cooking time 375deg F gas mark 5 then 350deg f gas mark 4 1/2 pint strong tea 3 oz fat lard or marg 3 oz moist brown sugar 1 teaspoon mixed spice 1 level teaspoon bicarb soda 6 oz mixed fruit 10 oz self raising flour Boil the liquid with the fat, sugar and fruit for about two to three minutes. Allow to cool slightly, mean while sieve the dry ingredients together. the add the liquid and beat well. Pour into a greased+floured eight inch tin, bake at the higher temp for 45 minutes, then at the lower temp for a further 30 to 40 minutes.

WACKY CAKE

1 1/2 cups flour
1 C sugar
3 T unsweetened cocoa, stirred before measuring to remove lumps
1 t each baking soda, baking powder and salt
5 T oil or melted butter or margarine
1 t each vanilla and cider vinegar
1 C warm water

In ungreased 8x8-inch pan combine well flour, sugar, cocoa, baking soda, baking powder and salt. Make three holes in mixture; pour oil into one, vanilla into another and vinegar into the third. Add warm water and mix until well blended. Bake in preheated 350 degree oven 35 to 40 minutes or until toothpick inserted in center comes out clean. Serve as is or frost with favorite frosting or can place lace doily on top and sprinkle with powdered sugar.

Chocolate Crazy Cake

3 cups flour
2 cups sugar
1/3 cup cocoa
1 tsp salt
2 tsp baking soda

Sift together into 9x13 ungreased pan. Stir with fork

Add:

2 cups cold water
2 Tblsp. vinegar
3/4 cup oil
1 tsp vanilla

Stir with fork. DO NOT BEAT

Bake at 350 35-40 minutes. Test with toothpick.

I use a cream cheese icing with mini chips, but it needs 1 egg. You can use something else. Peanut butter icing would be good.

AN EGGLESS CAKE

1/2 c. butter
1 1/3 c. sugar
1 c. milk
2 level tsp. baking powder
1 c. currants or raisins
1/2 tsp. mixed spices
1/3 tsp. salt

Beat butter and sugar until light and creamy. Add milk, fruit and lastly, the flour, salt and baking powder and spices which have been sifted together, turn into greased pan and bake in slow oven about 1 hour.

Mix cereal with melted chocolate and let it set. If you want to get creative, make different batches with marshmallows, and raisins and crushed nuts or a combination of these. And put icing/frosting on a batch or two.
