Usually those large chunks of meat are vacuum packed which helps seal out germs. Also, just the simple act of slicing the meat exposes it to germs that can make it go bad.

The slices are exposed to air. Your fridge may also not have the optimal temperature for dead meat. Personally I'd avoid the meat altogether. It starts decomposing the moment the animal is dead. Ewww!

You can separate them into portion of your each serving and put them in the freezer. Bring it down to defrost only when you need them.
