chicken bites
INGREDIENTS:
2 egg whites
1 pound uncooked boneless chicken breasts
3 tablespoons chopped onion
10 water chestnuts
1 can (4 ounces) mushrooms, drained
2 tablespoons cornstarch
1/4 teaspoon salt
2 tablespoons soy sauce
1 tablespoon dry sherry
PREPARATION:
Beat egg whites until stiff peaks form; set aside. Rinse and pat dry chicken breasts, put through food grinder with onion, water chestnuts, and drained mushrooms. Stir in cornstarch, salt, soy sauce, sherry; fold in beaten egg whites.
Shape chicken mixture into small balls and fry in deep hot (about 360° to 375°) fat. Drain and serve with toothpicks and dip, if desired.

Last night I made blackened tilapia fillets. They were really good. You can either use premixed blackened seasoning or make your own:
1/2 tsp cayenne pepper
1/2 tsp oregano
1 tsp paprika
1 tsp lemon pepper
1/4 tsp salt
Mix the spices together and sprinkle on both sides of the fish fillets (this should be enough for 4 fillets). Heat a little olive oil over medium high heat in a skillet. Once the pan is hot add a tsp of butter. When the butter is melted add the fish fillets. Do not crowd the pan, you might need to cook 2 at a time. Cook for about 3 minutes on the first side, flip over. I usually squeeze some lemon juice on the fish while it cooks, too. The second side should take about 2 minutes to cook.
I served the fish with applesauce (I used jarred and diced up a fresh apple and a little extra cinnamon and heated it on the stove until the apple pieces were soft) and Corn muffins with honey butter. This fish also goes nicely with a rice pilaf.

Chicken breast stuffed with roule and wrapped in bacon served with a whole load of roasted vegetables. Once you have prepared the chicken get a large roasting tin and bung the chicken and all sorts of veg in with a drizzle of oil. Takes about 40 mins on an average heat x

Coat some chicken tenders in a mixture of Italian style breadcrumbs, parm cheese, salt/pepper to taste, chili flakes and 2 bulbs of smashed and chopped garlic. (dont forget your egg wash first.) Fry up in some olive oil. They cook very quick because they are chicken tenders. Arrange the tenders in a baking dish topping with your favorite pasta sauce and either parm, mozzarella or both. Serve with pasta and you are good to go.

Spanish Omelette
3 eggs, mixed vegetables, choipped tomato, oregano & basil
Strir fry mixed vegetables, beat eggs, add eggs to vegetables.
Heat up chopped tomatoes, stir in basilk and oregano to taste, Add things like chopped mushrooms, onion and so on.
Serve omeletted, spoon tomato mixture into centre of omelette.

Steak, pan fried and cut into strips, add peppers and red onion (all of the steaky juices go on the onion mmmmmm)
Serve with pasta or chips or stick it all in a sandwhich mmmmmm!!!

boil some pasta and put some vegetables with spices in a frying pan with a little bit on butter and fry them at a low level. then fry in Olive oil some chicken breast. put the pasta in a plate, the vegetables on top of the pasta, the chicken breast on one side. easy, quick and yummy.

Baked Pizza Roll-Ups
1 can (8 oz.) refrigerated crescent roll dough
1/2 cup pizza or pasta sauce
1-3/4 cups (7 oz.) Sargento® Bistro⢠Blends Mozzarella & Asiago with Roasted Garlic
1-1/2 tsp. Italian seasoning
2 Tbsp. Sargento® Fancy Parmesan Shredded Cheese
Separate crescent rolls into triangles. Spread thin layer of pizza sauce evenly over each triangle; top with Italian shredded cheese and Italian seasoning. Roll up each crescent triangle, starting at wide end; place on baking sheet coated with non-stick cooking spray. Sprinkle Parmesan cheese over top of each pizza roll-up. Bake in preheated 375°F oven 15 minutes or until golden brown. Substitution: Sargento® 6 Cheese Italian Shredded Cheese may be used in place of Sargento® Italian with Garlic Shredded Cheese.
"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese
Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.
Baked Mac-sagna
1 lb. Macaroni cooked and drained
2lbs. Hamburger, browned and drained
1 large container large curd cottage cheese
1 large can gr. Pepper and mushroom spaghetti sauce
1 cup each cheddar and mozzarella cheeses
In large bowl, mix macaroni, hamburger, cottage cheese, sauce, and 3/ 4’s of each of the cheeses. Pour into baking dish and top with the remaining cheese. Bake until cheese is golden and bubbly.
