Get some sausage meat from the supermarket or butchers and some premade puff pastry. Roll out the pastry unitl it is only a few millimetres thick. Shape the sausage meat into logs, cut of enough pastry to cover it and wrap it around the meat. Repeat until you have enough and then cook in a hot over (about 200C) for 15-20 depending on your pastries cooking instructions. Try not to make the filling too think or else it wont cook through.
You can also add flavours to the sausage meat if you wish. Sage and onion taste nice but cook the onion till it is soft first before adding to the sausage meat.

beautiful tasty sausage rolls
Ingredients:
1 lb. (450g) pork sausagemeat
half a tsp. dried sage
half a tsp. thyme
1 tbsp. chopped parsley
12 oz. (350g) self-raising flour
2 oz. (50g) lard
2-3 tbsp. water
4 oz. (100g) margarine
salt and pepper
beaten egg for glazing
Cooking Instructions:
Add the herbs to the sausagemeat and mix together
Divide into 4 quarters and roll each quarter into a thin sausage shape on a lightly floured board
Sift the flour into a mixing bowl, add the salt and pepper, then rub in the lard and margarine
Add sufficient water to knead into a firm dough, then divide into two portions
On a lightly floured board, roll each half of the pastry into oblongs 12 inch (30cm)x 8 inch (20cm) oblongs
Cut each piece in half lengthwise
Place a roll of sausagemeat along the center of each piece of pastry
Damp one edge of the pastry and fold the other over and seal
Divide each roll into 2 inch (5cm) pieces
Place the sausage rolls on a baking sheet and glaze with the beaten egg
Bake in a pre-heated oven at 375F, Gas Mark 5, 190C for about 20 minutes
Cool on a wire rack before serving

well you buy sauage meat from the butcher roll it then you get some ready made puff pastry and your oll the two togther then you brush it with egg white and milk then you po it intio the oven for 20 mins and bobs your ankle you have a classic sausgae roll on h andby the way to give saudage meat a bit tasy you add sage and onion or garlic

2 loaves frozen bread, thawed or dough made in bread machine
1 lb pork sausage, hot or mild or half of each
1/2 cup chopped onions
3 eggs
1 teaspoon basil
1 teaspoon rosemary
1 teaspoon parsley
1 teaspoon garlic powder
1 1/2 cups diced mushrooms (fresh or canned)
2 1/2 cups mozzarella cheese, shredded
50 minutes 15 mins prep
Allow dough to rise and double in size.
Cook sausage, add mushrooms and onions.
Cook until tender.
Drain and cool.
Beat 2 eggs, set aside.
To sausage, add cheese and seasonings and the 2 eggs.
Mix well.
Roll each loaf of dough to about 16x12.
Spread 1/2 of the mixture with in 1 inch of edge.
Roll jelly roll style and seal ends.
Put on greased cookie sheet.
Bake at 350F degrees for 25 minutes.
Beat remaining egg.
Brush over the bread.
Bake 5-10 minutes more, until brown.
Greek-Style Sausage Roll
Work quickly with phyllo to make these savory rolls. Serve with green salad and ripe olives. Also good as a buffet item.
1 pound bulk sausage
1/4 cup finely chopped onion
1 (10-ounce) package frozen chopped spinach, thawed & drained
1/4 pound feta cheese, crumbled
1/4 cup finely chopped parsley
1/8 teaspoon white pepper
1 egg, beaten
10 sheets frozen phyllo dough (17x13-inch rectangles), thawed
1/2 cup butter or margarine, melted
In a large skillet cook sausage and onion over medium-high heat till sausage is done and onion is tender, stirring occasionally. Drain. Stir in spinach, feta cheese, parsley, white pepper and egg. Set aside.
Unfold the phyllo dough. Spread 1 sheet flat; top with another sheet of phyllo. Gently brush with some of the melted butter. Top with the remaining sheets of phyllo, brushing each with butter. Reserve 1 tablespoon butter for top of pastry.
Spread sausage-spinach mixture lengthwise over bottom third of layered phyllo dough to within 2 inches of ends. Fold ends over. Carefully roll up the phyllo. Place the roll, seam side down, on a lightly greased baking sheet; brush with the 1 tablespoon butter.
Bake in a 350 degree oven for 30-35 minutes or till golden.
