I eat chicken and turkey a lot! But I am getting bored with BBQ'ed chicken, fried chicken, lemon pepper chicken, etc. I need something easy and new---like a marinade or different way of cooking---this chicken. Help!!! Mommas, give me some recipe.
NOTE: I am in law school, 24, so my cooking time and skills are VERY limited.

here is a great and easy marinade from someone who is also a not-very-good-cook:
take a plastic bag of the kind meant for food, or use any deep dish or pot. Put in the meat - breastmeat from chicken or whatever + 1 cup veggieoil, ½ - 1 cup soy sauce, same amount orange juice or fresh squeezed lemon. If you use lemon add a tablespoon sugar. put in salt and pepper and perhaps a hint of dried garlic or other spice you fancy.
Put it in refrigerator overnight, or at least for a couple of hours. If you use the plastic bag, you can tie a knot, and don't have to worry about turning the meat over - it will be completely covered anyway - and there are one thing less to wash. Fry in a bit of the marinade until not red inside. Eat with bread, veggie, rice/potatoes or whatever. this is one of the few things i know how to make.
If you have a round bbq-grill with a lid, you can do the chicken as you would any bbq whole chicken, but stuff a can of beer with a couple of holes in up inside the chickens ....eehmm ...bodycavity.
Not kidding, it tastes really great.

Arros Con Pollo (Chicken with Rice)

This is the shortcut recipe. My mother used to cook it from scratch. People eat variations of this in Spain, Cuba, Puerto Rico, the Caribbean, and South America.

Get a "Mahatma" saffron (yellow) rice packet- large -at the grocery store..
Get some "mojo" from a Hispanic grocery store such as "Fiesta".
(Mojo comes in a bottle. It has garlic, lemon juice and a bunch of spices)
Buy some chicken and cut it up into pieces, bone in. Marinate it in the mojo overnight.
Fry the chicken after rolling it in flour.

Take a big casserole dish, or whatever.

Put the rice mix in there. Add the recommended water. Put the chicken pieces around the dish and then cook the whole thing as per directions.

Garnish with "petit pouis" baby spring peas, like Green Giant or just peas, and sliced red pimentos after cooking. Do kind of a circular pattern on top of the dish. Makes it very pretty.

There is also something my mother used to make which I believe is basically Creole food: It is called "Fri case de Pollo." Fricassee is a French sauce that makes the food you cook it in just outrageously delicious. Good too. You probably need to look it up on the Internet.

I don't have a recipe but I have this chicken dish that I make that everybody loves. You can use leftover grilled, baked, or boiled chicken; or you can make a marinade of cilantro and lime juice to grill chicken one day and make a little extra for the next day. Well, anyway you take your choice of cooked, boneless, skinless chicken and lay it over taco chips (like tostitos) in a microwave safe dish. Pour some tomatillo sauce over top (usually comes in 28 ounce can) and pour over all. Top with cheese and microwave until heated through. If you can't find the can of tomatillo sauce in your grocery you can use green enchilda sauce. Or a half and half mixture of La Preferida tomatillo salsa in a jar and green enchilada sauce. You can also bake this in a casserole for families. Add grilled onions and green peppers before the cheese if you like them. Serve with lettuce, black olives, sour cream... It might also be helpful the first few times to have extra sauce heated in case it's a little dry. This is so easy to do, very tasty, it looks good and is a nice change of pace. Buy a bottle of Kikoman stir fry sauce.

Cut up the chicken into bite size pieces. Chop of your favorite veggies, like zucchini, carrots, onions, mushrooms, etc and do a stir fry with the Kikoman's sauce. Serve over rice or chow mein noodles. Very filling and tasty. Leftovers are great too.

Make a chicken casserole.

Cook the chicken then shred it into a pan.
Mix one can of Cream of Broccoli soup and one can of chicken soup with one cup of milk. Pour over chicken. Moisten a one pound bag of herbed stuffing mix with the water that you used to cook the chicken in. Spread over the soup mixture. Bake until golden brown in a 350* oven.
Usually about 30 minutes.


*some people like to add chesse
*some people add mixed vegetables
*sometimes I use cream of celery soup
*sometimes I use cream of mushroom soup
*you can also use 2 cans of the same soup

They have this Jack Daniels marinade packet.... its easy you just open it, throw your meat in there, and let it sit in the fridge for a while, and then cook it. I usually used it for steaks but one day decided to try it on chicken and it was really good.
Also you could do chicken teriyaki??? Good luck.

Italian dressing works as a marinade, or they sell premade marinades in the condiments aisle. Try grilling it in strips and using in sandwiches or tacos. Another quick fix, check the sides of boxed sides, like noodles or rice, they often have add-in recipes that are usually easy.

Chicken Marsala?

Preheat skillet medium high heat w/ coat of canola oil
Dredge chix breast with thin coat of flour
Pan sear chix breast
remove from skillet and add onion and mushrooms
When onions are translucent, add some dry white wine (marsala... if you can't find any use chardonnay)
Allow alcohol to cook off
scrape bottom of skillet to remove carmelized chix
Add minced garlic and 2 tablespoons of butter and stir all together
replace chix and allow to simmer and thicken

Serve over bed of rice or noodles

chicken with cream *white* sauce..
can be done with chicken cubes..after cooking chicken in olive oil and garlic add vegies as u like (mushroom, broccoli etc) let them cook for a while then add double cream...let it cook for a few minutes then enjoy..

grilled chicken... on a grill or a pan..
in a seperate pot cook some mushrooms in garlic with herbs then add the cream..give it a few minutes and pour it on the grilled chicken..tastes good
