Complex creatures need a nice big genepool - and that's something that the simpler bi-sexual creatures don't need.

Where there is an abundance of the same sort of creature, or the creature generally hangs in packs - they tend not to be switchers. Where the population is incredible sparce, the creature needs to switch to take advantage of whoever else it might encounter in its long lonely life.

Because humans have no evolutionary need to change sex at will. But wouldn't that make for some odd mating rituals?

Why would He? Those species of animal that do that do so for the perpetuation of their species. Humans don't need to change sex in order to reproduce.
