I assume you haven't got a visa yet, in which case you need to download the forms from the embassy web-site. Once these have been filled in, phone the relevant consulate depending on the region she lives in for an interview. It would be either Beijing, Shanghai or Guangzuo. Write supporting letters and provide evidence that you have a proper home, sufficient funds in the bank and not going to be burden on the State.
Its up to her when she gets to the consulate, they will not want to talk to you. If she is successful, she will get a marriage visa valid for six months in which you will have to get married in that time period. It can be a long process and possible that your first application will not be successful. A handy tip would be to make sure that she knows as much of your background as possible when she goes for the interview.

There used to be a popular song about a "Slow Boat to China" so why don't you get her a ticket for the return trip. It's cheap, and she'll get here in 10-12 years.

You should be able to get a fiance visa for your fiance, especially if you plan to marry in the next 6 months. Otherwise why don't you go thru a civil ceremony so you are married and your spouse can get a partner visa?

Have a word with the Cockle- Pickers Union, they are allways interested in new members.

Maybe if you marry her in China you can bring her over as your wife. Surely that would make sense?

This may sound dumb, but why can't you buy them a plane ticket? Or go pick them up (presumably you take a plane there and back)?
