sodium and potassium line the membranes of cells and help to transmit nerve impulses along nerve cells. they also help to maintain an electrolyte balance in the body. sodium is the predominant electrolyte outside of the cell while potassium is the predominant electrolyte inside of the cell.
here is a good link with pictures of how the sodium and potassium ions line up along the membranes of cells, and how they are 'excited' in order to conduct nerve impulses:

Sodium and potassium work together to help control the body's water balance and to regulate pressure within and between the cells. Sodium is the main mineral in the fluid around the cells while potassium is inside the cells. Doctors often recommend that people with high blood pressure or those taking diuretic drugs (water pills) eat foods rich in potassium. Sodium and potassium also help transmit nerve impulses so that muscles can function

ionic balance is very important for the function of many proteins (enzymes) in the body. Different ions (sodium, potassium, calcium, magnesium etc) have different roles to play. Potassium ions are considered important in brain signaling. Sodium maintains a proper blood pressure.
Generally the ions define a certain voltage difference across membranes thereby permitting a directional flow of materials that were synthesized by the cells, which otherwise won't know where to go.

They stabilize the electrolytes in your system. Let them get too low..like taking a diuretic to get rid of fluid...and you could have a stroke. If you are taking a diuretic, you need to be taking potassium pills or you can eat bananas...they have lots of potassium in them. If you suspect you have low sodium and potassium, you should contact a Dr. Low sodium can cause problems with your muscles..and that includes heart muscles as well..don't ignore the problem.

Lots. They are the main electrolytes in the celular mechanism, and no life is possible without. Sodium also has the property to draw water and therefore the organism uses it to move water wherever it needs it.
Both their abuse or defficiency will cause severe health problems. There are certain quantities that are medically recommended.
