You know what bothers me more? My husband always says "and to be perfectly honest..." which I always take to mean that until then he wasn't? Or, he has a habit of ending a statement with "so", and I say..... So, what? and he gets mad because he thinks I am belittling him. I don't get it.

"I must say," is just an expression to emphasize the importance of an opinion, and "at the end of the day," sort of signifies how...when you get down to the point, this is what's true. Does that make sense?

They're just expressions. Don't take them literally.

I must say that it works quite well when you are finished at the end of the day.

I think it's because they don't know what to say. I find the saying 'at this moment in time' very annoying. For one thing by the time it's said the moment has gone, the other thing is, what else would a moment be in.

EMPHASIS

People say...To be honest,.... Does that mean that everything they said before and/or after was not honest...

I must say...at the end of the day...does it really matter?
