Cognac is more of a man's drink. A lot of women do not care for the taste, so it may be better to have something lighter for the women. A different and better wine than you had for dinner or sometimes old fashioned sherry.

That is a very classy approach. You will make good impressions with that (and hopefully your guests will appreciate your good taste and thoughtfulness.)
Not everybody likes cognac, so if you had a couple of choices of liquer, some might prefer those. Then again, I've had dinner parties where nobody wanted either a cognac or liquer, so that was $$$ that I could have saved. Oh well, what to do? But it sounds like you are going to lot of detail. Drinks and appetizers first. You don't have to finish with a fine cognac, but it is a nice touch. Just be sure to offer an alternative to the cognac because some folks find it too strong...JMHO.
