Chocolate Applesauce Cake

INGREDIENTS:
1/2 cup butter
1 1/4 cups white sugar
1/2 cup cold milk
1 1/2 cups applesauce
2 tablespoons dark rum
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup raisins
1 cup chopped pecans
1/4 cup dark rum
DIRECTIONS:
In a bowl, cream the butter or margarine with the sugar. Beat in the milk, applesauce, and 2 tablespoons of rum.
In another bowl, stir together the flour, cocoa, baking soda, spices, and salt. Beat into the creamed mixture and then stir in the raisins and pecans.
Turn the batter into a greased and floured 9x13 inch baking pan. Bake the cake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes, or until it tests done with a toothpick.
Immediately after removing the cake from the oven, sprinkle it with the remaining 1/4 cup rum. Let cool on a rack. This cake improves if allowed to sit for a day or so before eating. Serves 20.

1/2 can (400 grams for full can) condensed milk
125 grams self raising flour
2 tablespoons cocoa powder
1 level teaspoon baking powder
1/2 teaspoon soda bi-carb
60 ml. melted butter or margarine
1 teaspoon vanilla essence

Method


1. Sieve the flour, cocoa powder, baking powder and soda bi-carb together.


2. Mix the condensed milk, flour mixture, 100 ml. of water, the vanilla essence and melted butter thoroughly.


3. Pour the cake mixture into a greased and dusted 150 mm. or 175 mm. (6" or 7") diameter tin.


4. Bake in a hot oven at 200 degree C (400 degree F) for 10 minutes. Then reduce the temperature to 180 degree C (350 degree F) and bake for a further 15 minutes.


5. The cake is ready when it leaves the sides of the tin and is springy to touch. When ready, takeout from the oven and leave for 1 minute. Invert the tin over a rack and tap sharply to remove.


6. Cool the cake.

use a banana as an egg substitute or use mayo. (1/2 cup= 1 egg)
The easiest thing to do is order one from Walmart bakery.....my cousin's daughter is allergic to milk and eggs and several other foods. She had an egg free cake and non-dairy icing.....and the cake was delicious!!!!! Im gonna order mine that way next time just because it was so good.

Try using a cake mix, substituting an egg substiute for the egss. They usually have some info on the container that says, how much substitute eqqualls one egg.

Talk to the bakery and explain the deal to them. They are used to it and can still make an awesome cake.. eggs are a somewhat common allergy.

Use yogurt or applesauce instead. USe about 1/2 cup per egg substituted.

try making tiramisu... it's very easy.. just need graham crackers, condensed milk, all purpose cream and toppings you want to add, it can be chocolates, fruits and some sweets....

you just use the graham crackers as your crust. mix condensed milk with the all purpose cream as your filling. and you can put layers and layers of fillings and toppings on a big pan, and let it freeze... waaalaahh!!! you have frozen cakes...

Try an ice cream cake. If dairy is an issue too, there are dairy free ice creams available.
