I love the taste of ostrich, but there are no resteraunts around my area that serve it!

Ostrich is best prepared by cooking quickly over high heat until medium-rare.

We have the ostrich steaks at our Hannaford supermarket in town. I have never bought any, but unusual meats like that come with suggested recipes.( I buy ground bison, and it comes with recipes.) If your grocer doesn't carry ostrich, ask if they can get it.

Try looking at the ads in the back of food magazines like Gourmet, or Food and Wine, they might have places you can order and have it shipped.

Because it is very lean, you want to cook it quickly, and not too long or it will dry out, or cook it gently in a complimentary liquid (braise) or with a slice of bacon wrapped around the meat to add fat.

U mean EMU? I like the sausage but haven't had the steaks. I think there's an organization north of me, that sells EMU products. If you live in California's Shasta County, you might know of them.
