The easiest home cooked meal. Mix 1 pound ground beef with a can of diced tomatoes, a small palm full of onion powder, garlic powder, and a generous sprinkle of salt and pepper. Form into a loaf and put it in the oven on 350 for about 45 minutes. Put 4 nice sized peeled potatoes in a pot of boiling water and boil for about 20 minutes. In another pot put about 3 pats of butter and cut a few rings of onion to put in there. Cook the onion until soft and then add 2 cans of green beans, drained of the liquid they come in. Add one can of water, a small palm full of salt, and a good pinch of pepper and let boil until the meat loaf is ready. Drain the potatoes of the water, and smash them with a potato masher, adding just enough milk to make them creamy, a few pats of butter and salt and pepper to taste. You can add a garden salad, (they come already in a bag) and something really good to drink, (red wine if you prefer) and make it a good night.

Roasts are generally easy because you just put them in the oven and bake. Get a good cut so it will be tender. Ask your butcher for a suggestion. Get a meat thermometer and pop the roast in the oven at 450 degrees for 10 minutes and then reduce to 350 degrees. I believe it's usually about 15 minutes per pound of roast depending on how well you want it done. Again, your butcher should be able to give you advice on this. When the meat thermometer is about 5 degrees below the amount of doneness you want, remove the roast. The roast will continue to cook a little once it's outside of the oven. Let sit 10-15 minutes before cutting. Toss some potatoes on the rack next to the roast to make baked potatoes. The potatoes need about an hour to cook. Just wash the potatoes and poke with a fork a few times before putting them in the oven.

Mashed potatoes & Hellman's Crunchy Chicken:
Peel & boil about 6 large potatoes. When cooked, drain off water, mash potatoes well using a potato masher. Add about 1 tbsp. butter or margarine, 2 slices processed sliced cheese, about 1/4 cup sour cream & just enough milk to moisten to your liking.
Wash & season with salt & pepper 2 whole chicken legs, skins removed. Coat chicken with Hellman's regular mayonnaise, then coat chicken with italian style bread crumbs. Preheat oven at 350 degrees F, bake chicken for 45 mins to 1 hour. Bake covered with foil until last 15 minutes, remove covering.

"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese
Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.
Creamy Cucumber Salad
3-4 large cucumbers, peeled and sliced
1/2 red onion, sliced thinly
1 large tomato, diced (optional)
1- 1 1/2 cups Hidden Valley Ranch or Cucumber Ranch Dressing
Toss all ingredients in large bowl. Chill well before serving.
Toasted Cheesy Bread
1/3 cup Zesty Italian Dressing
1/4 cup each Parmesan and Mozzarella cheese, shredded
1 loaf italian bread, split in half lengthwise
In bowl, combine Italian dressing and cheeses (adding more Italian if needed to make mixture spreadable). Spread evenly over bread. Wrap bread in foil. Heat oven to 400 degrees, bake bread about 10-15 minutes or until cheese is melted. Remove foil and broil 5 minutes until cheese is golden and bubbly.

A can of soup and Grilled Cheese, Im not kidding there are some good soups out there. A Grilled Cheese is good with anything. And you can put some ham and a couple slices of tomato and Mayonnaise. If he don't like it, I'll eat it for you!

Spaghetti is very quick and easy. All you gotta do is cook the noodles for 7 to 8 minutes in boiling water. HEAT the key word is heat a can of sauce. Mix and serve.
