Garlic Mashed Potato Recipe


Potatoes are fat free, high fiber, low sodium, high potassium vegetables. Surprisingly enough, they are also packed with Vitamin C. Potatoes are one of the most commonly eaten vegetables, and mashed is one of the healthiest ways of eating them. This easy recipe will have everyone eating delicious garlic mashed potatoes in half an hour.

(Makes 6-7 servings)

Ingredients

6 cups peeled potatoes

6 garlic cloves

1/2-3/4 cup skim or soy milk

2 tbs margarine

salt and pepper, to taste

Directions

Place potatoes and garlic cloves in a large pot.

Cover with water and bring to a boil.

Lower heat and simmer for 20 minutes, until potatoes are tender. Drain.

Pour all ingredients into the pot (pour 1/2 cup of milk and, after blending, add more if desired). Blend with a mixer until smooth.

Serving Ideas

Sprinkle Parmesan cheese on top of potatoes.

Keep skin on potatoes (wash well!) for a chunkier texture and more fiber.

Add chives or thyme for extra flavor.

-In a food processor grind up peas or broccoli. Then add to the mashed potatoes to make it colorful and nutricious.
-Bake cut up butternut squash on flat pan in oven for 40 minutes then put in a blender with yogurt and cinnamon and nutmeg and puree. Add to mashed potatoes. You can also use a small can of 100% pure pumpkin to the mashed potatoes.
-Add yogurt and chopped green onion to the mashed potatoes.
-Bake up yams or the yellow sweet potatoes and mash them then you put in bowl with half regular potatoes and half sweet potatoes.
-Add Parmesan cheese and Italian dressing

here is how i do mash tater...... boil seversl tater cut in bite size pieces til fork tender drain well put back in pan an on stove a few min [ get all liquid off taters] now add 1/2 stick margarine,1 t chives, 1/2c sour cream.. mash well with tater masheradd seasoned salt to taste an fresh ground pepper... if taters to dry add milk a t at a time til they the way u like them.... i've also added bacon an cheese to the taters depends what i havin them with

Cut in some sour cream. Adds a little cool bite.

Also try:

ANY kind of creamy dressing.

Flakes of freshly cooked bacon, done extra crispy, or Bacon Bits if you have to .

Sprinkle toasted sesame seeds and top with grated cheese.

Cook batch of ground beef, drain it then stir in a can of cream of mushroom soup. Maybe add a can of green beans until hot. Spoon a scoopfull of this mess over mashed potatoes.

peel several cloves of garlic, give them a very light smash just to break the clove a little, then SLOWLY cook them in some good olive oil (or add a little butter to the oil) in a small frying pan on the stove until they are golden to dark golden brown, soft, and driving you nuts with the aroma. Drain off most remaining oil / butter, but leave enough to mash with the garlic into a fine paste, and add to your potatoes with butter, cream, salt and pepper.

I didn't say it was health food!

in Ireland we make a meal called champ. while boiling the potatoes chop some spring onions up appox 6mm heat them in a suucepan of milk then drain and dd them to the mashed potatoes or you could try Colconan fry some bacon in a pan when fried cut into small pieces then fry cabbage in the same pan and again when cooked cut into shreds then add the bacon and cabbage to the mash mmmmm you,ll love them

instead of using milk use cream

also cube your potatoes small for easy mashing

and maris piper potatoes are ideal for mash potatoes.

Boil your potatoes with 3 cloves of garlic. When you drain everything keep the garlic in the potatoes and mash right along with them. Add butter, sour cream, salt, pepper, a squeeze of lemon and dill (fresh or dried). These are killer Ranch Mashers. Yum.

5 to 8 Yukon Gold potatoes
2 T quality olive oil
1 cup gorganzola cheese
2 cups baby arugula, rough chopped
1 cup roasted pecans, chopped

salt and white pepper to taste

Boil cut potatoes with skin in salted water. Drain. Smash potatoes with with wooden spoon. Add olive oil. Stir. Add cheese, arugula and pecans. Stir enough to incorporate. Season to taste. DO NOT OVERMIX.
