Making candied peel is really easy and better than store bought in my opinion because all the ingredients are natural. There are no preservatives or anything like that. You just take some water, add some salt to it, bring it to a boil with some cloves, a cinnamon stick, a star anise, and mix it up. Then you add your sitcue peel when the water comes to a boil. Let it boil for about 5 minutes. Take out the peel. THen bring together 1 cup of water and 2 cups of sugar and bring that to a boil. When it's syrup like,add the peel in the syrup. and turn off the heat. Let them sit for about 5 minutes in the syrup and then take them out. Then you take a bowl of sugar, and roll the peel around in the sugar until they'[re coated. Then you take a cookie sheet, line it with parchment paper and lay them on the paper and let them dry until they're ready to eat. So good and much cheaper than store-bought. Happy cooking!

CANDIED ORANGE PEEL

Yield: 1 servings
1 Quart (1/4-inch wide) orange
Strips (about 15 oranges)
1/2 ts Salt
2 c Sugar
1 c Water
Sugar
Place orange peel in water to cover in a
Dutch oven; add salt. Bring to a boil, and boil 20
minutes. Drain. Repeat boiling procedure twice without
salt, and set orange peel aside.Combine 2 cups sugar
and 1 cup water in a small saucepan; bring to a boil
and cook, stirring often, until syrup spins a thread,
about 7 minutes (234 degrees). Add orange peel; simmer
30 minutes, stirring often. Drain orange peel well.
Discard syrup.Roll peel, a few pieces at a time, in
sugar. Arrange in a single layer on wire racks; let
dry 4 to 5 hours. Store in an airtight container.
Yield: about 1 pound.

Wash oranges, lemons, or grapefruit. Remove peel in 2 sections. Cut
each section into 1/4-inch strips. Cover with cold water. Heat to
boiling. Boil 10 minutes. Drain. Repeat 3 times. Drain. Cover with
boiling water and simmer until tender. Drain. Divide peel into 3
portions. Prepare a heavy sirup, using 2 cups sugar and 1 cup water.
Color 1 portion of sirup red, 1 portion green, and leave 1 portion
clear. Add 1/3 of peel to each portion of sirup. There should be
sufficient sirup to cover each portion of peel. Cook slowly until
tender. Allow to stand in sirup overnight. Drain thoroughly. Roll in
granulated sugar. Place on cake rack. Dry in very slow oven (250 F)
until surface is firm.

Ingredients:
Orange rind or grapefruit rind
Granulated sugar
Water
Grapefruit skins are much thicker than other citrus skins. Cooking them a while in boiling water helps loosen up the white pithy part so it is easier to scrape off.
Scrub the outside rinds thoroughly to remove any dirt. Put rind in cold water, bring to a boil and boil for 10 minutes. Drain and repeat this process two more times. Drain, rinse with cold water, and scrape away the pithy white part of the peel. Slice into strips. For each cup of rind, prepare a sugar syrup of 1 cup of sugar to 1 cup of water. Put rind in syrup and cook slowly until syrup is completely absorbed - several hours. Stir occassionally and watch carefully near the end of the process. Cool the peel and coat the strips with granulated sugar. Dry overnight on a rack. The sugared peel, when dry, may be dipped into melted semisweet chocolate.

2.In a medium saucepan, heat sugar and 1/4 cup water over high heat until boiling. Place peel in sugar mixture, reduce heat and simmer 15 minutes, until sugar is dissolved. Remove peel with slotted spoon and dry on wire rack overnight. Store in airtight container.
