APPLE-GLAZED CARROTS
1 tablespoon butter
1 16-ounce package peeled trimmed baby carrots
1 cup unsweetened apple juice
1 teaspoon honey
1 tablespoon minced green onion tops
Melt butter in large nonstick skillet over medium-high heat. Add carrots and sauté until carrots begin to brown slightly, about 8 minutes. Add apple juice and honey and bring to boil. Reduce the heat and simmer until carrots are tender and liquid is reduced to glaze, stirring occasionally, about 15 minutes. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green onion tops and serve.

Peel them, chop them into slices, or dice them. Put in a pan with enough water to cover,
Put lid on pan . Boil till done, about 25 minutes.
Drain, Add Lots of Butter, and lots of sugar.
Even people who do not like cooked carrots will LOVE them with lots of butter and sugar on them!!

I usually steam all my fresh vegetables. You lose less nutrition and color that way. Just slice them, they take about 20 mins if I recall, it's been a bit since I've done them, until tender. They are also good roasted with onions potatoes and a pot roast.

You put them in the microwave(or a covered pan) with some water and steam them, then sprinkel some brown sugar over them.
