I need a recipe to make "half & half cream" or any substitute for it because I don't have any & I can't buy any for now. I want to use it in ice-cream recipes. No Allergies Involved.

Use half milk and half cream, obviously.

You can use canned evaporated milk (thin with milk) as a substitute.

I often make lemon ice cream using mascarpone - add lemon juice towards the end of the churning cycle.

Half and half is literally a mixture of 1 part cream and 1 part milk. If you are making ice cream, there really is no subsitute. You cannot replace it all with milk and expect the recipe to turn out the same. With many other recipes, milk would be a fine substitute, but if you tried to make ice cream with it, the quality will suffer. Sorry!

yeah. 1/2 cup unsalted butter 1 cup heavy cream 1 cup freshly grated Parmesan cheese extra cheese for dusting top of pasta coarsely ground black pepper 3/4 pound fettuccine, cooked Directions: Melt butter in a pan large enough to accommodate the pasta with room to toss it without spilling. Over moderate heat, add cooked pasta and mix well with the butter. Add half of the cream and toss with a fork and spoon. Add half of the cheese and toss to incorporate well, adding more cream a little at a time-the cream should be barely noticeable when the dish is finished, use only enough to keep the pasta from sticking together. Keep tossing and add the rest of the cheese and if needed more cream. Toss until the cheese has melted. Remove to a heated serving dish and top with extra Parmesan cheese and a few turns of the pepper mill to taste. Serve immediately.

You may want to specify the reason you cannot use it. Is it an allergy? If so, that wipes away all milk stuffs and you may be stuck with soy. Or are you just out of 1/2 and 1/2? Heavy whipping cream could work

The reason it's called half & half is because it's half whole milk, half heavy cream. You can use whole milk, but it won't be as rich.

you can use milk or evaporated milk..but you will get a different texture--not bad, just not as creamy...i have done it lot's of time when i was out of h and h ...try it. sometimes experiments in the kitchen yield the best recipes.
