We would like to refinance our mortgage but my credit basically stinks. I was told we must use my credit score and information if my name is on the deed. If this is true, would it make sense to take my name off the deed?

Yes, it's true in most cases that the mortgage holder must also be the deed holder. The key in your case is to shop around as much as possible. Why? Simply because different companies offer very different rates.
