In a round about way I agree with the sentiment of what you are saying. The Bible is, according to belief and tradition, the word of God as interpretted by humans, constrained by the boundaries of culture, time, and language. It is almost impossible to say for certain that we know exactly what any specific passage means.
I completely disagree with you about people interpretting the bible. With research, study, thought, and prayer, there is a lot that can be gleaned by trying to figure out "what is meant by xyz." It doesn't mean that anyone is necessarily right or wrong (although there are some interpretations that are MUCH better than others). If we don't work at trying to understand God's truth the best we can, than we have wasted this precious gift of God.

We don't "interpret" the Bible like it is a foreign language, we read and study it for what it is, the inerrant word of God. It is several books combined into one volume. It is inerrant in history, doctrine and ethics. Most of Jesus' sayings were pretty straight forward, we don't need to "interpret" them. If you did some study into Biblical translation, you will find that the KJV is pretty much a straight translation from the earliest manuscript copies. It also helps to have an understanding of the Hebrew and Greek language. For example, in Genesis, the word "day" in Hebrew is "yom" which means a 24 hour day. You don't have to be a prophet to understand the word of God, just a mind and willingness to learn.

If no one took the time to interpret the Bible, what would be the point in having it? This is the same for any form of literature. When you read something and do not have access to the source (i.e. the author) it is completely left to interpretations. Everyone has the right to see things in their own way, so of course people will have their own interpretations.
So to get flustered because people have their own ideas of what the Bible means is silly, because it has to mean something. If we did not interpret, then the words would mean nothing, and all written works would be meaningless, even the words we are reading right now.

It is simple to understand the bible if you have a little wisdom.
On your seven days it is said that 1 day to God is LIKE (not is) a 1000 years to man and a 1000 years is LIKE (not is) but a day to God.
You must also take the word back to the original text. You don't have to be a prophet nor have the mind of God to understand something as simple as the word of God.

You can decipher the meanings by using the bible as a reference to itself. Many passages within the bible can be cross referenced through words or phrases used. Check out the book Strong's Exhaustive Concordance of the Bible" if you want to. As for the gentleman who said the bible was written by humans, yes but dictated by GOD.

No man can understand every word of the bible, none of us really understand it. Because it was written by God. If the book was written a man or group of men some one, just one of us would understand it, but God is on a much higher level than we are, so of course we can not understand every word.

Quite honestly, having grown up around contractors and builders, if they could prove to me that the earth was created in 168 earth days, I would beleive more in their God.
That would be some divine work.
