FRIED SUMMER SQUASH
2 or 3 sm. summer squash, sliced about 1/4 inch thick
2 eggs, slightly beaten
1 c. milk
1/2 c. flour
1 tsp. salt
Oil for frying
Combine eggs, milk, flour and salt in a small bowl, beating well. Dip each slice of squash in batter and fry in frying pan until brown turning and brown both sides. Serve hot.

5 Medium Summer Squash
Whites of 2 Eggs
1 Cup Bread Crumbs
2 Tablespoon Finely Chopped Mixed Herbs (Parsley, Oregano, & Thyme Are Good Choices)
1/4 Cup Grated Parmesan Cheese
Salt & Pepper
Olive Oil Spray
Remove the stem end of the squash, and cut them on a diagonal into 1 inch slices. Mix together the breadcrumbs, cheese, herbs, salt and pepper. Lightly beat the egg whites, and then dip the squash slices into the egg white allowing the excess to drip off. Next dredge the squash into the seasoned breadcrumbs.
Preheat the oven to 350 degrees F. Lightly spray a baking sheet with the olive oil spray, and then place the breaded squash slices onto the sheet. Once you have filled the sheet with slices, spray the top of the squash slices. Bake for 20 minutes and then turn the slices over. Bake an additional 10 minutes, or until the squash is lightly brown and soft inside when pierced with a fork. Serve warm or at room temperature.

Serves 6
3 pounds yellow squash or zucchini
1/2 cup (1 stick) butter, melted
1/2 cup chopped onion
2 eggs, lightly beaten
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon pepper
1 cup fresh bread crumbs
Slice the squash. Boil or steam until tender. Drain, then mash. Preheat the oven to 375 degrees F.
In a mixing bowl, combine the squash with half the melted butter, the onion, eggs, sugar, salt, and pepper. Spoon into a 2-quart casserole dish. Combine the bread crumbs with the remaining butter and sprinkle over the squash. Bake for about 45 minutes and serve hot.

1 medium acorn squash, halved and seeded
1 tablespoon butter
2 tablespoons brown sugar

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.
Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash wont slide around too much) while baking.
Place squash in the 350 degrees F (175 degrees C) oven and bake another 30 minutes.

I always wash them and then pat dry with paper towel ... Cut them in about 1/16 inch slices ... Salt and pepper ... NOT too much salt ... Dip in eggs pre-beaten with a fork and then into flour ... Drop in very hot cooking oil ... PEANUT Oil is the best because it can maintain a temperature of 450 degrees without smoking/burning ... Now, here's the thing ... You don't have to always use that kind of batter ... You can also substitute Yellow Corn meal for the egg/flour batter ... Quite similar to Breaded Shrimp or what some people may call "Fan-tail Shrimp" ... Enjoy!

If your from the south, take the squash and wash it real good. Cut it into thin (not too thin) slices and dredge in milk or egg. Then take and roll them into corn meal. It works best if you take a freezer size zip-lock bag and put the corn meal in it. Like shake and bake. Then after the squash is coated real good cook in a frying pan with a little oil. Its best to cook each piece individual. But you can dump it all in the pan and just fry it like that. I like the the one piece at a time method.

what? Thought you need a rubber ball to play squash. Might be a bit hard with bread. Hmmm. And crumbly too
