This is one of the favorite meals in my house and of everyone I give it too! Don't be wierded out by the cream cheese... it really works!
BBQ Chicken Pizza
1 boboli pizza crust
1/2 block of cream cheese, softened
2-3 cups cooked chicken, diced or shredded
1 cup BBQ sauce
2 cups shredded monterrey jack or cheddar cheese
diced green chiles or jalapenos (optional)
Heat oven to 450.
Toss chicken with 1/2 of the BBQ sauce and set aside.
Spread cream cheese evenly over pizza. Spread remaining BBQ sauce over that, followed by chicken mixture. Top with cheese and green chiles (or jalapenos) and bake at 450 until hot and bubbly (about 10-15 minutes.)

How long has this chicken been in the fridge? If it doesn't taste good when reheated there is a good chance that it is on the turn and should not be eaten. If you want to save cooked chicken, either use it within 24 hours or freeze it when it has cooled.
Leftover chicken can be used for a casserole or a great chicken and mushroom pie. Curry or Stir-Fry both fantastic ideas.

Strip the meat off the bone and tear into medium size pieces
Heat fry pan add olive oil and butter50/50 add choped garlic lightly fry garlic add chicken and heat through.
In the mean time put on a pot 3/4 full salted water and bring to boil when boiling add pasta of your choice a simmer untill a dente
Add a small canof drained button mushrooms to the chicken and continue heating
Add a good dribble of Port or Sherry (essential for mushrooms)
When reduced pour in a cup of double cream stir in and reduce some more
When pasta is ready drain add tablespoon of olive oil to pasta pan and coat pasta
Serve the chicken mushroon source on a bed of pasta topped with fresh corse grated parmigan and a good dry white wine.
I peel garlic and keep in a jar full of olive oil for pasta and salads

Shred the meat. Add some garlic, onion, salt and drained Rotel. Cook until it is heated through and the onions are cooked. Serve in a taco shell. Wallah! Chicken tacos.
Serve with cheese , sour cream, salsa or guacamole.Whatever you like on tacos.

Mix with mayo and have a sandwich. You can also shred the meat and just warm it up with a little bit of liquid and make chicken tacos. Don't microwave it.That doesn't do anything good for the taste.

Curried Chicken Salad with Apples and Raisins
This is fantastic!
Enjoy this fruit-studded chicken salad with whole-grain crackers, or spread it on whole wheat bread for a sandwich.
1/4 cup low-fat mayonnaise
1 teaspoon curry powder
2 teaspoons water
1 cup chopped skinless, boneless cooked Chicken (about 4 ounces)
3/4 cup chopped Braeburn apple (about 1 small)
1/3 cup diced celery
3 tablespoons raisins
1/8 teaspoon salt
Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the Chicken, chopped apple, celery, raisins, and salt; stir mixture well to combine. Cover and chill.
Yield: 2 servings (serving size: about 1 cup)

Don't heat it up in the microwave first of all. Take the meat off the bones and put in a tomato sauce over pasta.

ACTUALLY, IF EVER STORE CHICKEN AGAIN AFTER COOKING IT, DEBONE IT BECAUSE THAT IS WHAT CAUSES IT TO TASTE FUNNY. IF USE IT TONIGHT, DEBONE THE CHICKEN AND ADD SOME BBQ SAUCE TO IT, HEAT IT UP. MAKE A SANDWICH OUT OF IT OR PUT IT IN A FLOUR TORTILLA WITH SOME LETTUCE AND TOMATOES.
