2 cups oats
1 1/2 cups whole wheat flour
1 cup apple juice
1/4 cup dried fruit, packed and chopped
3/4 teaspoon cinnamon
6 tablespoons brown sugar
1/2 teaspoon salt
1/2 cup fat substitute (mash bananas, berries,
pureed pears, etc.)
Preheat oven to 375¡F. Spray a 9x13 (or a little smaller) pan with nonstick spray. Mix all ingredients, pat thinly on bottom of pan, sprinkle with extra cinnamon and bake for 30 minutes. WAIT TO COOL before removing or they will crumble. Suggestions on dried fruit: half raisins and half dates.

1/2 cup light corn syrup
4 egg whites
2 tablespoons honey or molasses
2 teaspoons vanilla
1 cup brown sugar
1/4 cup sugar
3 cups oat bran
2 cups rolled oats
1 cup flour
Preheat oven to 350¡F. In large bowl, mix corn syrup, egg whites, honey and vanillan with the sugars, gradually blen in dry ingredients in order listed. Spread mixture to about 1 inch depth in two 9 X 13 iinch baking pans sprayed with Baker's Joy. Bake 20 minutes (or microwave for 9 minutes on medium setting) Allow to set for at least 30 minutes before cutting into bars. Bars will firm up as they cool, so be sure not to overbake.
Cereal Yogurt Bars
2 cups raisin bran cereal
3/4 cup flour
1/4 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1/2 cup butter
8 ounces strawberry lowfat yogurt
1 egg, slightly beaten
2 tablespoons flour
Mix cereal, 3/4 cup flour, sugar and cinnamon in small bowl. Cut in butter until mixture resembles coarse crumbs. Press 1/2 of the mixture firmly into bottom of greased 8-inch square baking pan. Mix yogurt, egg and 2 tablespoons flour in another small bowl. Spread over cereal mixture in pan; sprinkle with remaining cereal mixture. Bake at 350F for 30 minutes or until golden brown. Cool in pan on wire rack. Cut into bars.
Cheerio Bars

1/2 cup peanut butter
3 1/2 cups cheerios cereal
chocolate chips
Mix together syrup and peanut butter. When mixture is smooth, add cereal, and stir to coat. You may also wish to embellish the recipe by adding a handful of carob or chocolate chips or chopped peanuts. Press mixture into a lightly greased oblong pan, and let it cool. (You may need to refrigerate in order for it to harden.) When cool, cut into squares, and enjoy.
Crockpot Breakfast

Mix together the peanut butter and tahini until well blended. Add the maple syrup and heat to boiling, stirring occasionally. Add the Grape Nuts and mix thoroughly. Spread evenly in a lightly oiled 13" x 9" pan. Sprinkle wheat germ on top if desired. Chill until firm and cut into bars. Variation: Instead of the tahini, use another 1/2 cup peanut butter.

1 package yellow cake mix
3/4 cup butter
2 1/2 cups quick oats
12 ounces preserves or jam
1 tablespoon water
Preheat oven to 375¡F. Melt butter. Combine cake mix and oats in a large bowl; stir in the melted butter until the mixture is crumbly. Measure half of this mixture (about 3 cups) into a greased 13x9x2-inch pan. Press firmly into pan to cover the bottom. Combine preserves and water; spoon over crumb mixture in pan, and spread evenly. Cover with remaining crumb mixture. Pat firmly to make top even. Bake at 375F for 20 minutes--top should be very light brown. Cool completely before cutting into bars.

Pumpkin Granola Bars

3/4 cup canned pumpkin
1 egg
1/4 cup butter
1/4 cup honey
2 tablespoons molasses
2 cups rolled oats
1/2 cup chopped walnuts
2 tablespoons shredded unsweetened coconut
1/4 cup wheat germ

1 tablespoon grated orange peel
In mixing bowl or food processor, blend together pumpkin, egg, butter, honey and molasses. Add oats, nuts, coconut, wheat germ, cinnamon and orange peel; process until well combined. Spread mixture in lightly greased jelly roll pan. Bake in 350ºF oven for 40 minutes or til golden browned. While still warm, cut into bars. Microwave method: Spread batter onto microwave safe plate or tray and cook, uncovered, on med for 8-10 minutes, turning tray 3 x. Watch carefully as batter burns easily. Makes 30 bars.
Supper Daddy Bars

1 1/2 c. grape nuts cereal -- (1 1/2 to 3)
1 package date pieces (8-12 oz)
2 teaspoons grated lemon rind
1 teaspoon cinnamon
1/4 cup brown sugar
1/2 cup raisins (optional)
Put everything but the raisins in a food processor and process for 4 minutes. Add the raisins and process for 1 more minutes. Shape into whatever shape you want... I've heard that dinosaurs and Power Rangers are especially tasty. It's a little sticky; they're easier to shape if you dip your hands in water occasionally. They come out of the food processor a bit warm and soft; they firm up as they cool. I wrap them individually (plastic wrap, aluminum foil or waxed paper) so they don't stick together and refrigerate them.
All proportions are flexible. The consistency is determined by the fruit/cereal ratio: more fruit makes them chewier, more cereal makes them more crumbly. The prunes are stickiest, so they need more cereal (closer to 3 cups); the dates need the least (closer to 1 1/2 cups). Figs are somewhere in the middle. Also, adding the raisins near the end leaves little raisin chunkies that offer a nice textural contrast. Other dried fruits (peaches, apricots, etc.) would probably be good too. They keep well for a week or so, although they get firmer as they get older.

Multi-Grain Muffins

Ingredients
1 cup prunes, pitted and chopped
1 cup plain lowfat yogurt
3 Tbsps. olive oil
1 egg, beaten
3/4 cup all purpose flour
1/2 cup old fashioned oats
1/2 cup whole wheat flour
1/3 cup sugar
1/4 cup cornmeal
1/4 cup toasted wheat germ
1-1/2 tsps. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt (necessary)
nonstick cooking spray
Instructions
Preheat oven to temperature 400°F. Combine first 4 ingredients in a mixing bowl. Mix thoroughly. Sift together remaining ingredients in another bowl. Stir prune mixture into dry ingredients until just moistened. Spray muffin tin with nonstick cooking spray. Fill 2/3 full. Bake 20 minutes or until tester comes out clean when inserted in center. Turn out muffins immediately to cool.

1/4 cup dark corn syrup
2 egg whites (or egg substitute)
1 cup oat bran
Preheat oven to 350 degrees F. Instructions: mix figs, honey, OJ and lemon juice in a food processor. Mix all other ingredients separately (except oat bran). Combine 2 mixtures, roll into 20 balls, coat with oat bran, and bake at 350 deg for 10-15 minutes. Store finished product in the refrigerator. Nutrition Facts per bar: 150 Calories | 4 gr.
