I've used Emeril's and it's pretty good but not real spicy. I know I can play with the recipes, but some of his stuff gets pretty fancy, too. I want just a good general cookbook with the basics. Gumbo, red beans and rice, dirty rice, ect. Thanks.

Emeril's cookbook is really to me more Creole than Cajun. Creole food will not be very spicy. Here are two Cajun cookbooks...

Chef Paul Prudhomme's Louisiana Kitchen
(the book that really popularized Cajun cooking!)

Justin Wilson Cookbook
(Old time Cajun cook who had a TV show on PBS - great stories!)

Another with both types is:

Encyclopedia of Cajun and Creole Cuisine by John Folse
(another old school cook!)

CRAB MEAT AU GRATIN

1/4 lb. butter 1 ½ cup heavy (whipping) cream
1 cup onion, minced 1 tsp. salt
1/4 Green Onion, minced 1 tsp. Black pepper or ½ tsp. cayenne pepper
1 Tbs.. garlic, minced fine 3 egg yolks, well beaten
2 tbsp. garlic, minced finely 1 lb lump Crab meat, clean of all shell
1/4 cup bell pepper, minced
1/4 cup all-purpose flour
1 ½ cup sharp Cheddar Cheese, Shredded coarsely

Procedure:

In a saucepan, melt butter on medium heat. Add onions, green onion, garlic, shallot, bell pepper, and simmer 5 minutes. Add flour a little at a time, stirring until all mixed. Cook 5 more minutes stirring constantly. When flour begins to stick slightly, slowly add whipping cream and stir as you add it all. Cook until mixture thickens, stirring constisently for about 4-5 minutes. Remove from heat. Stir in salt, pepper, egg yolks and stir until well blended. Fold in crab meat and half of the cheddar cheese until mixed well. (be careful not to break up the crab meat too much).

Put in individually greased ramekin bowls and spread remaining cheese on top. Bake uncovered in a 350°F oven for 20 minutes or until cheese begins to brown. Serve. (page 70 of Dat Little Louisiana Plantation Cookbook)
