steam it over a pan of savoy cabbage, then a bit of butter and salt on the fish and the cabbage when it's cooked - Mwaah!

I like it poached or grilled. I also love it in kedgeree - had some the other day scrummy.

Basically - cooked long grain rice, hard boiled egg choped, cooked frozen peas, cooked and flaked smoked haddock, chopped parsley. Can also add very finely small chopped onion.

Cooked and left overnight and then reheated in the microwave the flavours absorb more and it really is delicious - do go ahead and give it a try you wont be disappointed.

Orange Haddock recipe
makes 4 servings.

Ingredients
• 2 cups cooked rice
• 1 medium orange
• 1/4 cup sliced green onion
• 2 teaspoons chopped fresh rosemary, divided
• 2 tablespoons orange juice
• 1 teaspoon cooking oil
• 1/8 teaspoon fresh ground pepper
• 1 pound haddock

Preparation
Preheat grill to medium. Combine rice, chopped orange, green onions and 1 teaspoon of the rosemary. Fold a 36x18-inch piece of heavy foil in half to make an 18-inch square. Place rice mixture in the center of foil. Bring up opposite edges of foil and seal with a double fold. Fold remaining edges together to completely enclose rice, leaving space for steam to expand. Place rice packet on grill and cook 15 minutes or until heated through, turning once.

Meanwhile, combine orange juice, remaining 1 teaspoon rosemary, cooking oil and pepper. Brush on haddock fillets. Place fillets on greased grill rack, tucking under any thin edges. Grill fish for 5 minutes per half-inch thickness, turning once. Serve with rice.

This is the way I do it-
put a filet on a lined and Pam'd baking sheet, skin side down. Sprinkle on lemon juice, garlic salt, pepper, parmesan cheese, and bread crumbs. Put on top a couple pats of butter. Broil about 8 minutes or until white throughout. Yum!
This also works for any white fish!

Butter a double thickness of foil, big enough to cover the fish. Place fish on it, in the middle, cover with a couple of tomato slices. Sprinkle with lemon juice, add salt and pepper to taste. Make foil into a sealed parcel around the fish, place on baking tray and cook in a hot oven until done. Cooking time depends on the thickness of the piece of fish.

health wise bake it-squeeze lemon on it and season with garlic powder (not much) and cavendars greek seasoning. spray some butter substitute on the haddock after seasoning the fish. bake on 350 degrees. around 15 to 30 minutes. check with allrecipes.com or cooks.com for exact cooking time!

unhealthy is fried!

Sometimes I like my fish to be the star, thus adding very few ingredients. I usually just place the fillet in a baking dish...dot with butter sprinkle on paprika and parsley and a few squeezes of lemon.

Poach it for about 4 minutes in water with some milk added, tastes yummy.
