okay i am going to give you a meatloaf recipe:

1 pound lean ground beef
1 clove garlic or 1/8 teaspoon garlic powder
1 small onion
2 slices bread with crust
1/4 cup milk
2 teaspoons Worcestershire sause
1 teaspoon chopped fresh or 1/4 teaspoon dried sage
leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard, dry
1/8 teaspoon pepper
1 egg
1/3 cup of ketchup, chili sauce or barbecue sauce.


1. Heat the oven to 350*. Break up the beafinto large pieces in a large bowl, using a fork.
2. Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
3. Tear the bread into small pieces and add to beef mixture.
4. Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
5. Place the beef mixture in the ungreased baking pan. Almost any size pan will work; just be sure the pan has sides on it to catch the juices that will accumulate while the meat loaf bakes. Shape the mixture into an 8x4- inch loaf in the pan, and spread ketchup over the top.
6. Bake uncovered 50 to 60 minutes or until beef in center of loaf is no longer pink. A meat thermometer inserted in the center of the loaf should read 160*. Let the loaf stand 5 minutes, so it will be easier to remove from the pan. Cut the loaf into slices.

I just bought this community church cookbook and they have this recipe for a meatloaf that I cant wait to try. It sounds unique and different. I am going to try it tonight. Here is the recipe. Clare's meatloaf 1/2 c. Grape-Nuts cereal 1 pound hamburger 1/4 c. chopped onion 1/2 c. water 1 egg, slightly beaten 1/2 tsp. salt Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. EDIT: I made this meatloaf tonight and it was really delicious and VERY moist. I baked my meatloaf for 50 minutes instead of an hour. So you may need to adjust the time for your meatloaf. I also made a gravy using the pan drippings. My family loved it. This recipe is definitely a keeper. I think next time I make it I am going to add Italian Seasoning to it.

I cannot take credit for this - AuntieM115 answered my Turkey Meatloaf question with this recipe. I tried it and it is DELICIOUS! You can substitute the turkey with beef!!!

Turkey Meatloaf

A very spicy and lower-fat meatloaf.
1 1/4 lbs ground turkey
1 cup skim milk
3 slices bread (torn into little pieces)
1 egg white
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
1 tablespoon mustard
1/2 teaspoon italian seasoning
1/2 teaspoon garlic powder
1/4 cup catsup (I like to use the new spicy catsups)

Preheat oven to 350 degrees.
Mix all ingredients except catsup.
Press into ungreased loaf pan.
Spoon catsup over top.
Bake for 1 hour.

INGREDIENTS:
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour

I remember as a kid watching my mom make keat loaf & I do it the same way today. I never learned amounts though. It's sort of what the eye sees, you know??
1 lb. lean ground beef
1/2 roll of Jimmy Dean Sausage ( flavor of choice)
the rest is just what looks right
eggs, salt, pepper, quaker oats, onion, ketchup
I just put the meat in a big bowl & use my hands to mush it together to mix. Then add an egg, diced onion, ketchup, etc.
add it in small amounts. You want to be sure you add a ton of fillers, the stuff is ONLY there to add base & keep the meat together. You don't want it to moist, but if you add too much of the quick oats they will soak up the moisture & it will be too dry. It takes practice. Form into a loaf, place into a loaf pan & bake @ 350 until done.

There are many good meatloaf recipes out there. The nice thing about meatloaf is that it's cheap, easy, very versatile, and very forgiving! Most of the time, I don't even measure anything--I just add in whatever amount looks good.
I have a basic recipe with a few variations that I use all the time. Feel free to "play" with it, and don't worry too much about exact measurements.

Note: It's always a good idea to wash your hands before and after mixing the meatloaf.
Combine the following in a large mixing bowl (you can use your clean hands; stirring it with a spoon is difficult):
1 to 1 1/2 lbs. ground beef, turkey, or a mixture of the two (or, if using ground pork, you'll probably want to stick with variation A or C).
1 egg (medium or large work best)
1/2 to 1 cup of oatmeal OR crushed saltine crackers OR cooked rice OR cooked beans (such as leftover baked beans)

Blend in the ingredients for any one of the variations below. When the mixture is well-combined, either press the mixture evenly into a 9 x 13 glass baking pan, or shape it into a flattened loaf (about 1 1/2 inches thick) and place it in a shallow baking pan with edges deep enough to keep the drippings contained. Bake at 350 degrees F for about 45 minutes or until the top looks done and the inside is no longer pink (I usually slice it in half to check for doneness; if the meatloaf is thick, it may take up to 65 mins).

Variation A (Italian-style): add 1/4 cup tomato sauce or spaghetti sauce; add generous dashes of garlic powder, oregano, and onion powder, a pinch or two of ground sage, and a light sprinkling of pepper (optional). You can top the shaped meatloaf with spaghetti sauce or tomato sauce before baking, if desired.

Variation B (sweet BBQ-style): add about 1/4 cup lightly-packed brown sugar, and either 1/4 cup BBQ sauce OR a blend of BBQ sauce and ketchup to equal about 1/3 cup. Top shaped loaf with additional BBQ sauce and/or ketchup, if desired. My kids love this one. This is best served with BBQ baked beans as a side dish!

Variation C (beef & onion style): add one package onion soup mix and a scant 1/4 cup tomato sauce. Top shaped loaf with more tomato sauce, if desired. This gives a more "traditional" meatloaf flavor.

Variation D (gravy-burger style): use crackers in place of oatmeal (or in place of rice or beans), or omit altogether. Blend in 1 package brown gravy mix and 1/2 can of condensed cream of mushroom soup (do not add water). Using another package of gravy mix, follow package directions to make gravy; blend in remaining cream of mushroom soup mix. Use this gravy to top shaped meatloaf before baking OR serve it as a gravy with the baked meatloaf. This meatloaf will fall apart more easily than the others, but once it's topped with gravy and served over mashed potatoes, it won't matter. ;-)

1/2 cup warm water
1 (1 ounce) package dry onion soup mix
2 slices bacon
1 (8 ounce) can tomato sauce

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine the beef, eggs, crumbs, ketchup, MSG, water and soup mix. Mix well and spoon mixture into loaf pan. Cover with 2 strips of bacon, then cover with tomato sauce.
Bake in preheated oven for 1 hour.

ground beef, seasoned bread crumbs, one small can of tomato sauce, one egg, some uncooked rice (just a little). Mix all that crap together. Mold it to a loaf and pour another small can of tomato sauce on top and put in the oven for an hour. Good and easy

Combo of super lean ground beef, ground turkey, and ground pork, bread crumbs, tomato sauce, egg, onion, bell pepper, celery, salt, pepper. Mix together and put into loaf pan/s and cook for 1 hr. Top with bbq sauce and cheese and cook for an additional 10-15 minutes until bubbly.

The easiest meatloaf:

Goto supermarket, and in the canned tomato section, look for "Hunt's Meatloaf Starter Kit" tomato sauce. There's a recipie on the can, follow it, and you'll have perfect meatloaf.
