I hear Sandals in St. Lucia is incredible. They're not exactly low-budget, but the only thing you'd have to pay for when you're there are any souveniers or shopping you do.

My wife and I got a package deal to the Iberostar Paraiso Lindo resort just south of Cancun. We stayed there for a week, and our air fare, transportation to and from the airport, our stay at the resort, all meals at the resort, and all beverages (including most alcoholic drinks) were included. It was a beautiful resort with a gorgeous stretch of beach, the food overall was very good (their Italian dinner left something to be desired) and we had a great time. Total price tag was around $2,700.00 in 2004, so it has probably gone up some, but we would go back in a heartbeat. Actually, I'm thinking about taking her back there for our 5th anniversary.

Hawaii or Disneyland. Sounds corny to go to Disneyland but it's easier before the kids, lol.
