It is more difficult to extact a cashew whole from the shell. Try extracting the meat of a whole pecan or whole walnut without breaking it.

It's a case of Supply and Demand. There are gonna be more halves and pieces than whole nuts simply because the extracting and storing process can cause the nuts to break.

It's not just cashews, it's the same with any nut. Wouldn't you expect to pay more for a package of whole Oreo cookies than you would a package of the broken Oreo crumbs they use to make Oreo Blizzards with at Dairy Queen?

It's all about being aesthetically pleasing. People pay more for the whole nut, Less for the half and even less for the pieces. They all taste the same after all it is a cashew.
