A delicious lemon pound cake with lemon glaze
INGREDIENTS:
1 cup butter, softened
1/4 cup vegetable oil
3 cups sugar
5 eggs
3 cups all-purpose flour
1 cup milk
1 teaspoon lemon extract

Glaze Ingredients:

1/2 cup sugar
1/2 cup water
1 teaspoon grated lemon rind
1/4 cup lemon juice
PREPARATION:
Beat butter in a large bowl at medium speed of an electric hand-held mixer; gradually add oil, beating until well blended. Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.
Add flour to creamed mixture alternately with milk, beginning and ending with flour. Mix just until blended after each addition. Stir in lemon extract. Pour batter into a greased and floured 10-inch tube pan. Bake at 300° for 1 hour and 30 minutes or until a wooden pick inserted in center of the cake comes out clean. Cool in pan on a wire rack for 15 minutes. Remove from pan and place directly on wire rack.
Combine glaze ingredients, stirring until sugar dissolves. Brush lemon glaze on sides of cake and spoon glaze over top, a little at a time. Let lemon pound cake cool completely.

Here is my favorite blueberry recipe.
2cups blueberries
2 tbs. lemon juice
1&3/4 cups sugar
1 cup flour
1 teas. baking powder
1/2 teas. salt
1/2 cup milk
1 tb. cornstarch
1 cup boiling water
Butter a 8x10 pan. Put in berries & sprinkle with lemon juice. Cream 3/4 cup of the sugar with the butter. Sift flour with baking powder and 1/4 teas. of the salt. Add flour alternately with the milk to the sugar butter mixture. Spread over the berries. Mix 1 cup sugar with the cornstarch and 1/4 teas. salt. Sprinkle over batter. Pour boiling water over all. Bake at 350 for 55 min. Serve warm with whipped cream. Enjoy!

Blueberry Ice /cream Topping
2 cup fresh or frozen blueberries
1 tablespoon water
2 tablespoon sugar
pinch of salt
1/2 teaspoon cornstarch
1 teaspoon cold water
1 1/2 teaspoon lemon juice
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Ice cream
In a saucepan, combine the blueberries,water,sugar and salt;cook
and stir over low heat until sugar is dissolved. bring to a boil. Reduce heat;simmer,until the berries burst.
Combine cornstarch and cold water until smooth;stir into hot blueberry mixture. Bring to a boil,cook and stir for 2 minutes or
until thickened. remove from the heat;stir in the lemon juice,vanilla and cinnamon. Serve over ice cream. Yield 1 1/4 cups.

Pound cake slice in half
On bottom half spread cool whip, put blueberries on top and cover with top half of pound cake, spread more cool whip on top and blueberries again, ta-da blueberry cream pound cake.
