2 cups heavy cream
1/8 teaspoon garlic powder
1/2 cup butter
1/8 teaspoon pepper

*Directions:
Add all ingredents in a medium sauce pan, let simmer for 12 minutes or until the desired consistancy is reached.
you can serve over your choice of pasta noodles.
or if you want, you can just have it as a dipping sauce for your bread sticks!

*Ingredients:
1/2 cup real butter
1 pint (2 cups / 16 fl. oz.) heavy whipping cream
1 tsp. garlic powder
salt and pepper - to taste
1 dash cayenne pepper
2/3 cup fresh grated Parmesan OR Romano cheese
1 lb. box fettuccine noodles - prepared as directed
chopped fresh parsley - for garnish, optional

*Directions:
-In a 2-quart saucepan over medium-low heat, melt butter; add cream, garlic powder, and salt and peppers; simmer for 20-30 minutes, stirring constantly, until thick.
-Remove sauce from heat and stir in cheese. Do not heat sauce after cheese has been added.
-Serve sauce over hot fettuccine noodles and sprinkle with parsley, if desired.

Notes: Though you can’t rush this sauce, if it seems to be taking too long to thicken, stir in up to 1/4 cup cream cheese. Make sure your Parmesan or Romano is grated and not shredded; it won't melt properly if shredded. Do not use Kraft® Grated Parmesan in the canister; your Alfredo won't taste right. Either grate your own or buy the stuff from the deli.

*Ingredients:
1/2 cup sweet butter
2 garlic cloves, minced
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1 (12 ounce) box angel hair pasta

*Directions:
Melt butter in medium saucepan over medium/low heat.
Add the garlic, cream, white pepper and bring mixture to a simmer.
Stir often.
Add the parmesian cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
When sauce has thickend add the mozzarella cheese and stir until smooth.
While the sauce cooks, boil noodles for 3-5 minutes.
Plate pasta on serving plates and spoon sauce over pasta.

*Ingredients:
3/4 to 1 cup Parmesan cheese, grated (In this case,"Green Can" works better than fresh.)
8 oz Low Fat Cream cheese, softened and/or cut into bits
1/2 cup margarine
1/2 cup skim milk
1/4 tsp. onion powder
1/4 tsp. garlic salt (or powder - if preferred).
8 oz Fettucine, or pasta of choice, cooked, drained

*Directions:
In large saucepan ( I use the microwave and a microwave proof container.) combine cream cheese, margarine, onion, garlic, and milk, stirring constantly until smooth. Stir in the parmesan until smooth.
Toss pasta lightly with sauce, coating well, and serve.
Leftover sauce will freeze well.

"I worked at the OG for 4 1/2 years, 2 years in the kitchen. This recipe is missing a few things. (yield almost 1 gallon) Tblsp-Garlic Puree which you brown first. Then add 1 lb butter until melted. Add 2 quarts heavy whipping cream & 8 oz milk. Add 1 lb Parm. cheese and 4 oz fontina cheese with 1 teasp. salt and 2 teasp. black pepper. Stir on med-high until thickens. Turn off heat and continue to stir. Wha La!! Right off the sauce card. Enjoy"

4 servings 1-1 1/2 pints of Alfredo Sauce

Let the sauce simmer as long as you can

1 pint heavy cream
1/2 cup butter
2 tablespoons cream cheese
1/2-3/4 cup parmesan cheese
1 teaspoon garlic powder

In a saucepan combine butter, heavy cream, and cream cheese.
Simmer this until all is melted, and mixed well.
Add the Parmesan cheese and Garlic powder.
Simmer this for 15- 20 minutes on low.
You may wish to season with a little salt and pepper.
I have done this with half and half, but we prefer the heavy cream.

Procedures

PASTA:

Cook Spinach Fettuccine and fettuccine according to package directions.

ALFREDO SAUCE:

Heat the milk and cream in a heavy bottom saucepan until it comes to a simmer.

Slowly whip in all the cheese, then remove from heat.

In a separate bowl, place the egg yolks and slowly whip in a portion of the hot milk and cream mixture.

Slowly add the egg yolk mixture back into the remaining cream mixture.

(This will increase the temperature of the egg yolks which is called tempering).

Season to taste with the salt and fresh cracked black pepper.

Refrigerate until needed.

FINAL ASSEMBLY:

Place a large skillet on medium heat.

Add butter, garlic, herbs and proscuitto and cook until the ingredients are hot.

Add the pasta and the Alfredo Sauce and stir until the sauce thicken to the desired consistency.

Toss in the peas and stir and season with salt and pepper.

Serve immediately.

Quick and easy alfredo sauce.

1 pt. heavy cream
1 stick butter
1/2 cup parm. cheese
1 tsp. flour (optional)

Melt all together in a sauce pot, stirring constantly. If you like thicker sauce add the flour.

Alfredo Sauce Recipe

Ingredients:
1/2 cup butter or margarine
2/3 cup heavy cream
1 1/4 cup grated Parmesan cheese
1/4 teaspoon salt
dash of pepper
noodles or fettuccine, cooked

Directions:

Cook noodles or fettuccine according to package directions. Heat butter and cream in saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper; stir until sauce is blended and fairly smooth. Add to drained noodles and toss until they are well coated. Sprinkle with remaining cheese.

Variation: Add cooked shrimp, crab or mushrooms.

16 med. mushrooms
2 tbsp. mayonnaise
1 tbsp. parsley (chopped fresh)
2 garlic cloves, minced
1 tsp. chives (fresh if possible)
1/2 tsp. lemon juice
1/4 tsp. oregano
1/4 tsp. dry mustard
Salt and pepper to taste

Wash and slice mushrooms. Combine remaining ingredients in separate bowl. Fold in mushrooms, turning to coat evenly. Garnish with chives if desired. Serve chilled. 150 calories per serving.
