Slice the mushrooms, saute in a generous amount of butter, seasoned with lemon pepper. Stir in a splash of white wine and serve with crusty bread to soak up the sauce.

Stuffed Mushrooms - a great starter or a side dish (StartersSalads)

Ingredients

allow 3-4 mushrooms per portion
1 medium finely chopped onion
15-18 medium size mushroom or 4-5 jumbo mushrooms
salt, pepper
1 chopped garlic clove
paprika
oil

How to cook:
Wash and dry the mushrooms. Remove the stalks and chop finely. Mix with the finely chopped onion. Heat a pan, add little oil and fry the mixture for 3-5 minutes, add the chopped garlic, season with salt, pepper and paprika and remove from the oil.

Arrange the mushrooms in a greased roasting tin, fill them with the hot mixture and cook in a preheated oven 200C for about 10-15 minutes or until the mushrooms have softened.

You can serve on their own, you can pour over sour cream, or you can use them as a garnish with your favourite steak.

Mushroom Soup
Clean and slice mushrooms, carrots, celery, onion, and potatoes and cook in mushroom stock (from “Mushroom Stew” recipe) until tender. If starting without mushroom stock, use 2 qt. water and cook 3 cups mushrooms with 1/4 stick of butter until tender, then add other ingredients. Add parsley, green onions, basil, a dash of thyme and oregano. Cook a few more minutes. Salt and pepper to taste. Also makes good noodle soup. Just add 1 cup egg noodles with parsley and green onions.

2 Quarts mushroom stock with butter
2 cups Mushrooms
2 large carrots
2 stalks celery
1 onion
4 large potatoes
1 bunch parsley
1 bunch green onions
basil, thyme, oregano, salt & pepper to taste

Serves 4-6

Get some ciabatta bread, drizzle with olive oil, rub on some crushed garlic, put a knob of butter and a bit more garlic on the inside of the mushroom, place the oven for about 8-10 minutes, take out, and serve with a little more drizzled olive oil.

I love sliced mushrooms, pan fried with a little olive oil, salt, pepper, garlic, paprika, a little pinch of cayenne pepper and then when the mushrooms are wilted and slightly golden, add a splash of cream, and maybe a small squeeze of lemon juice, it's like a mushroom stroganoff and serve it with (or on) wholemeal toast

I used to make a mushroom starter by gently cooking them til just done, covering in pepper sauce & cheese, then microwaving until cheese melts. Yummy

Have you ever sauteed them in a little butter, with onions, tomatoes and garlic. Served on toasted sourdough rounds. They are to die for. Good eating.
