something high in protein and vitamins as me and my man are ill and also under weight at the mo.

Salmon, and asparagus with pesto.

Get a couple salmon filets with the skin on. In a pan throw a little olive oil down and heat under medium-low heat.

Cook the filets, skin side down. Dont turn them. Cover the pan.

Chop the aspargus into like 1-2 inch pieces and throw them into the pan after a about two or three minutes. The skin of the salmon should already be getting a little brown, and the top should look a little cooked.

Let that cook a couple mintes (2-3) then throw a big spoonfull of store bought (or homemade if you're amibtious) pesto sauce on top. Cover for another minute. The pesto shoul melt on the salon a bit. Use a spatula to remove the salmon (KEEP the skin. it should be crispy and tasty..... if you burned it, next time a little lower heat, this time just chuck the skin) Toss the asparagus in the pesto a bit,

I like to serve the salmon on a bed of the asparagus. Maybe with a thin slice of lemon as a garnish.

You might serve this with a rice side dish, or some nice crusty bread.

White Fish (my fav is haddock)
Tomatoes
2 Leeks
Garlic
Brown Rice

Cook up the brown rice (Add 1 1/2 cups rice to 3 cups boiling, salted water; cover & simmer 40 minutes.

Preheat oven to 375.
Chop leeks and put them in a casserole dish.
Set the fish on top of the leaks.
Top with chopped tomatoes and minced garlic.
Sprinkle with Salt & Pepper.
Pour 1 cup of white wine over it all; cover with foil.
Bake 20 minutes or until fish flakes easily.

Serve over hot cooked rice.

BEEFSTEAK SMOTHERED IN ONIONS

1 doz. sm. onions
1 slice porterhouse steak, cut thick
Salt
Pepper

Heat a frying pan hissing hot. Put in beefsteak, searing first on one side then on the other. Cook five minutes. Season with salt and pepper. Add onions which have been cooked 1/2 hour in boiling salted water. Cover and simmer 20 or 30 minutes. Remove steak to platter, spread with butter, and season with salt and pepper. Season onions with salt, pepper and butter and serve around steak.

could do chicken and dumplings, chicken high in protein, and the dumplings are high in carbs. Good recipe: use pre-made biscuits you buy in the grocer's cold area, use 2 cans of Campbell's chicken broth, cook your chicken in the broth, remove, cut up the biscuits the size you like, place in broth, cook roughly 20 min, then add chicken, (shredded). mmmmmmmm...(you will need to add some water and seasons to the broth to your taste)

Umm...maybe try some fish fillet or meatloaf or baked/grilled chicken. And of course with vegetables on the side.

vegatable pasta dish. vegs are great for you, tomato sauce is great for you and pasta has nice carbs to pack on some weight.

cook homemade chicken soup.cuz it has fat and veggies in it for you. and eat it with toast or a roll. thats carbs right there. :]
