I will be there for a day trip therefore it would be good for everything to be close to each other.

1st of all I wouldn't recommend going to Bruges too many tourists and also tourist trap for most bars and restaurants (if you have a choice try Antwerp or Ghent instead just as nice but not chockfull of Americans and Japanese)
1 good tip though is a little Irish theme pub called celtic Ireland just outside of the central square while restoring the pub they actually dug up medieval ruins and the owners decided to put glass tiles under the bar so you can see them
As for Brussels
1st advice DON'T LET Yourself get caught into one of the restaurants near the Rue Des bouchers way overprised and not worth it. If you really want a typical taste of brussels just outside the historic centre (it's reachable on foot) you have the Vossenplein/place Jeu des balles where they hold a flea market every morning The square is surrounded by a lot of typical cafés where you can eat and drink typical foods at reasonable price (When in Brussels try the Gueuze or kriek beer lovely stuff)
Furthermore you have some nice restaurants and bars just opposite the Brussels stock exchange at the end off the Rue Orts. Furthermore you can also find a couple of nice restaurants In the Rue Rollebeek (just off the fancy Sablon square it also has restaurants but top of the range and to be reserved weeks in advance.)
Be Sure to visit the Grand Place and our Manneken Pis while there. As for shop a must Is the famous Gallerries the Gallerie de la Reine/Du Roy are very nice furthermore you also have the main shopping street nl de Nieuwstraat/Rue Neuve. with in the middle the passage du nord another nice gallery. One tip When in Brussels most shops and restaurants staff do speak English but when asking to the people in the street they are either Dutch or French speaking; try in French first as even the Dutch speak French but not Vice Versa. Go downtown Brussels, you can see a lot of cafes, restaurants and all kinds of Irish and English bars. All in all, the old town area is awesome in the evening. Just having a stroll there is a complete fun.

There are too many to remember, when I went a few years ago, I found it best to always take a walk down a side street when looking for somewhere to eat, the best places are off the main street, where you will get good value for money and good service, have a fresh omlette and Belgian fries with mayo, wonderful. But if just having a coffee, sit on one of the many squares, full of life, I love just watching people go by. Don;t forget to get some chocolates, they are out of this world, fresh handmade, a little more expensive but with a huge variety of fillings, they are just something, the white chocolate is wonderful. If you get some, don't forget to keep them in the fridge, and eat them fairly quickly
