jaffa cakes

2 egg whites
1/2 cup Splenda sugar substitute
1/2 unsweetened applesauce (I tend to make my own using 3 apples and no sugar)
3/4 teaspoon bicarbonate of soda
2 oranges
1/2 cup chocolate chips
2 cups self raising flour

Grease a small loaf pan.
Beat egg whites until soft peaks form, gradually beat in Splenda.
Mix apples and bicarbonate soda, being careful as it will froth a little.
Carefully fold in apples in egg whites along with grated rind from the oranges and chocolate chips.
Stir in sifted flour and juice from oranges and place in prepared tin and cook in moderate oven for around 30-40 minutes.
For icing mix together 3/4 cup icing sugar and 1 to 2 tablespoons of orange juice.

Jaffa Cakes
ingredients
2 eggs
50 g (2 oz) sugar
65 g (2 1/2 oz) self-raising flour, sieved
approx. 60 ml (4 tbsp) marmalade, sieved
100 g (4 oz) plain chocolate
rind of 1/4 orange, finely grated
10 ml (2 tsp) corn oil
15 ml (1 tbsp) water



method
1. Whisk the eggs and sugar until thick and creamy; when the whisk is lifted the mixture leaves a trail.

2. If using a hand whisk put the bowl over a pan of hot water, then fold in the flour.

3. Spoon the mixture into 18 well-greased, round-bottomed patty tins.

4. Bake for about 10 minutes at 200°C (400°F) Gas 6 until golden brown. Cool on a wire rack.

5. Spread a little marmalade over each cake.

6. Put the chocolate, orange rind, oil and water into a bowl over a pan of hot water.

7. Stir well until melted. Cool until the chocolate starts to thicken and then spoon over the marmalade. Leave to set.

ingredients
125 g (4 oz) butter
3/4 cup caster sugar
grated rind of 1 orange

1 1/2 cups self-raising flour
1/3 cup orange juice
2 tablespoons grated chocolate
2 tablespoons chopped, blanched almonds to decorate

for the Chocolate glace icing
3/4 cup icing sugar
1 tablespoon cocoa
1 teaspoon butter
1 tablespoon boiling water

method
1. Beat butter, sugar and orange rind until light and fluffy.

2. Add eggs one at a time, beating well after each addition.

3. Sift flour and fold in alternately with orange juice.

4. Blend in grated chocolate.

5. Turn into a greased and floured baba mould or ring cake tin and bake in a moderate oven 180-190�C (350-375�F) for 45 to 50 minutes or until cake shrinks from sides of tin.

6. Turn out onto a wire rack and cool.

7. Pour icing on top and let it dribble down sides.

8. Sprinkle with chopped almonds.

for the Chocolate glace icing
1. Sift icing sugar and cocoa into a heatproof bowl, add butter and pour boiling water onto butter.

2. Blend until combined, place over boiling water and stir for 1 minute until icing melts.

3. Do not overheat as icing will go dull when it sets on cake
