• 2 Tbsp. vegetable oil :
- Olive oil, or a canola/olive oil 1:1 mix.
- Use only 1 Tbs

• 1/3 cup diced yellow onions
- Yellow onions are pretty healthy already.

• 1 Tbsp. minced fresh ginger
- Ginger is vey healthy

• 1 Tbsp. minced garlic
- Garlic is great for your heart.

• 2 eggs, lightly beaten
- You can use 1 egg and 1/3cup nonfat milk

• 2 (2 oz.) Chinese sausages, thinly sliced diagonally
- Substitutes: Turkey sausage, tofu, soy protein.

• 1/4 lb. medium raw shrimp, peeled and de-veined
- Very, very healthy.

• 3 cups cold cooked turmeric rice or cooked long grain rice
- Use wild rice, which is a LOT healthier. Full of nutrients and fibers.

• 1 Tbsp. chili garlic sauce
- I think it's OK to use it, otherwise you're dish will taste like something else completely.

• 1 Tbsp. fish sauce
- Again, keep it.

• 1/2 cup pineapple chunks
- It's a fruit, it's healthy, it's delicious. Keep it! ;)

2 Tbsps. vegetable oil - not needed so should be removed. If you are adamant about including it, use extra virgin olive oil

2 eggs lightly beaten - the point of the eggs is the egg whites, not the yolk. It is far healthier to use 3 or 4 egg whites instead of two whole eggs. Or you can just use egg beaters.

2 (2oz) Chinese sausages - A far healthier alternative to the sausage is to use the same weight in canadian bacon

3 cups rice - Basmati rice has a lower glycemic index and tastes a hell of alot better than those other types of rice. You could also use brown rice but it will substantially change the taste of the recipe

chili garlic sauce - use chili powder, same amount

fish sauce - Use a couple of ounces of cooked salmon

The resulting meal will tast almost exactly the same but will be much lower in fat (or at least have good fats), and calories and have a lower glycemic index.

A) Use Applesauce instead of Oil

B) Don't use Eggs, Instead Use Substitute's:

* Ener-G Egg Replacer & follow directions on the box.
* 2 tbsp corn starch = 1 egg
* 2 tbsp arrowroot flour = 1 egg
* 2 tbsp potato starch = 1 egg
* 1 heaping tbsp soy powder + 2 tbsp water = 1 egg
* 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg
* 1 banana = 1 egg in cakes.

C) Use the Water from canned Tuna, instead of the Fish Sauce.

looks like some kind of fried rice, use just a splash of olive oil instead of vege oil and change the white rice to brown rice.

You could also just use one sausage and maybe add a chopped fresh vegetable of your choice into the recipe (That would probably work best if you cooked it with the sausage wherever the recipe advises you to) and maybe halve the chili garlic sauce and fish sauce.
