As for your question, rather then sacking her, why not make her life so utterly miserable and unbearable she leaves?

Tell her you are reorganising the company and everyone must reapply for their jobs by taking a simple test, then tell her she has failed the test then offer her a menial job...tea lady/ cleaner/messenger that sort of thing perfectly legal and works every time

Report her to social services for being an unfit mother. Once her kid's taken off her, her work is bound to suffer, then it's "goodbye fatarse".
