Personally, I use spice and condiments sparingly. When I was younger, I liked food with a lot of spice. But of course then, my tastes were less refined than now.

The older I get, the more I prefer to enjoy foods in their natural state with their own natural flavors. I think that spices make food all taste pretty much the same.

Traditionally, the use of spice was to preserve foods before refrigeration, and food was often "put-up" or dried, or kept in some other ways. Also, heavy spices helped make decaying food palatable - so it could be consumed and there would be less waste.

I think the tradition continues despite the fact that there is less need for it. But in general, it seems that spicy foods appeal a lot more to young adults, and more traditional cultures.

I can't eat a meal without garlic. Onions are great too. Peppers of all types spicy and bell pepper are great sauteed with butter. I'm getting hungry. See you at the kitchen in two minutes!
